We’re back in Val di Fiemme, exploring the region’s rich gastronomic traditions ahead of the 2026 Milano Cortina Olympics. Augusta is here to show us how to make menudoli, a deliciously cheesy pasta that’s a local speciality but still a bit under the radar outside the region. It’s easy to prepare and absolutely tasty. This is Augusta’s recipe:
For the dough:
300g Kamut flour
3 eggs
1 tablespoon olive oil
For the dressing:
100g Puzzone di Moena cheese
50g butter
Buon appetito!

Another Friday treat. Looks delicious. Thank you Vicki. I’m
No way that 60 year young lady is already over 90…
It looks like pure comfort food, but better! Pasta, cheese, and butter. Simple, but elevated with Augusta’s lovely homemade pasta and local cheese.
So classic Mac and cheese? I'm down. Looks great.
I loved this, I would have all my dreams fulfilled if it was 3 times a week! This channel reduces my stress level. Such great content 👏 🎉😊
Puzzone di moena
I have a rolling pin exactly like that, made by my Italian great uncle and given to me as a wedding gift over 50 years ago. I use it all the time.
Perhaps I'm missing out on other channels out there that I don't even know exist, but I am truly grateful to you Vicky, for helping documenting, if not preserving, these traditional foods. I'll chalk it up as one of the many contributions of Britain to world cuisine 🙂
Also, re the value of "pasta al burro": a plate of high quality, well cooked pasta, with good melted butter and grated cheese is the ultimate comfort food for Italian children, same as the American mac & cheese.
But here's the thing, if it's well executed, even for an adult it's at the same level of more celebrated dishes, like Amatriciana or Carbonara, and it does help that in Trentino, like in other places in the mountains, butter and cheese are just a step above.
Thank you again for your wonderful videos!
Again, a woman I'd like to sit and listen to – a life well lived , full of hard work and struggle perhaps, but her smile speaks volumes about a life with much joy and love. Thank you, Pasta Grannies!! And a Happy New Year to all.
Would this also work with a vintage cheddar? I don't think I've ever seen anything similar!
Augusta made a lovely dish. Thank you. I love your enthusiasm for her work and story.
❤❤❤❤
Another fabulous Granny AND love to this deliciously minimal dish. ❤️🧡
She’s a treasure and a beautiful
Lady. I would eat that meal every day and not be tired of it.
Does anyone put cheese into the pasta dough?
Buon Anno 2025 a tutti, Salute, Felicità, Harmonia e Buon gusto. Thanks again Vicky for bringing these gems of our Italian heritage, for Augusta and so many more. Brava e buon appetito 👏👏👏🥰🤗😋
Wonderful! You only need to say smelly cheese and I’m there 🧀 Happy 2025!
I was familiar with Kamut but did not know it was a brand name. I just looked it up, and the generic name for it is either Khorasan wheat or Oriental wheat (Triticum turgidum ssp. turanicum).
I also had to look up "maltagliati" and was amused to see it means "badly cut." I got the "mal" part of it, but I don't know enough Italian for the rest of it. Searching for "menudoli" mostly turned up recipes and articles for menudo — not even remotely related!
Pasta, cheese, and butter. Simple, but gloriously delicious. And the few minutes spent in the kitchen with Augusta were such a delight. Thanks for sharing!
Yum!
That looks delicious!
you have such wonderful lighting from the sun in this one! everything looks beautiful
I love these simple dishes, they're especially great when you're utterly knackered after a long day.
Hello, I recommend going to Suedtirol, they make Schlutzkrapfen , pasta with spinach and cheese filling ….delicious also
I was thinking that these videos are great memory keeps for the grannies’s families, along with being informative, entertaining, interesting and beautiful. It’s great for the families to have a video of their loved one sharing their knowledge and telling their stories while cooking something they love or know well.
💐🙏
Augusta is another dynamic woman. Thank God you chronicle these ladies. Running a furniture company with her husband and now her children, water aerobics twice a week, and fresh, whole ingredients show the benefits in Augusta. This is a pasta I am not familiar with, same with the cheese, but I can practically smell the aromas from here in Pennsylvania. Thanks for another great episode!
Saudações do Brasil
A nice meal
Another reason to watch this show. These women are so vibrant and beautiful healthy. I don’t think we will be in their state here in Canada. 🇨🇦. She has always been active and that is indeed integral part of health. We have too much large cities that require us to drive. And of course how can you go wrong with pasta butter good butter and cheese. All these are made locally with healthy ingredients. Bless her heart❤
Aaahhhh, I loved this recipe!!
I visited Tunisia recently and I ate the Tunisian pasta and I can confirm that this Tunisian pasta is the most delicious meal that I've ever eating in my life 😋💖
What an amazing lady and she defies the years, it makes me very happy to see. That dish looked a real winter warmer perfect for the cold crisp day, I am drooling at the cheese selection, simplicity is king. Thank you Augusta you are so very interesting and thank you Vicky and Co. Ramon x.
