Zero-skill CNY Recipe: Braised Chestnut Chicken with Abalone 鲍鱼栗子焖鸡 Chinese Lunar New Year Stew Dish

For the marinated chicken
1kg (35.3 oz) fresh chicken, cut into bite-sized pieces
1½ tbsps oyster sauce
2 tbsps light soy sauce
1 tbsp Chinese white rice wine
1 tsp sugar
A few dashes of white pepper
1 tbsp cornflour
Other ingredients
35g (1.2 oz) young ginger, thinly sliced
1 bulb garlic, peeled
2 stalks of spring onions (use the stems first; reserve the leafy tops for the end)
1 star anise
1 small cinnamon bark
1½ tbsps premium dark soy sauce
1 can of abalone (use the brine for braising; add the abalone near the end of cooking)
300g (10.6 oz) chestnuts, peeled
1 can of button mushrooms, drained (optional)

Its always funny to see non Muslim chef to say , you could omit wine if you can't partake. But you never will jear Muslim chef says you could add wine if you can partake. This spoke volumes.
Just want to check do I use the can abalone in brine or can I use the can braised abalone in sauce for this dish? The can abalone braised in sauce is brown in colour.
