Wonderful job as always! I've never seen salsa made without tomatoes before.
Btw, the round cookie cutter thing is a springform pan (typically used for baking cheesecakes and other types of cake.) It's a great idea to use it to make sure the tortillas are all the same size. Someone needs to get you a taco press; it's not very expensive and it's a more authentic way of making tacos. Plus, even though you can only make one taco at a time with a press, I think it might end up being faster.
