Malzemeler:
500 gram iki kez çekilmiş kıyma (%20-25 yağ oranına sahip dana-kuzu karışımı; döş veya kaburga tercih edilebilir)
1 çay kaşığı karbonat (O esnek, tok dokuyu veren en önemli maddedir)
1 çay kaşığı kimyon
1 tatlı kaşığı tuz
1 çay kaşığı karabiber
2 diş sarımsak (Çok ince kıyılmış veya ezilmiş)
1 çay kaşığı tatlı toz kırmızı biber

Hazırlanışı:
Geniş bir kapta kıymayı, karbonatı, kimyonu, tuzu, karabiberi, sarımsağı ve isteğe bağlı toz biberi bir araya getirin. Hiçbir bağlayıcı (ekmek, yumurta, galeta unu) veya ekstra yağ eklemeden, en az 10-15 dakika boyunca elinizle iyice yoğurun. Ne kadar çok yoğurursanız, et o kadar sakızsıleşip özleşecektir.
Yoğurduğunuz kıymanın üzerini kapatın ve buzdolabında en az 4-5 saat (vaktiniz varsa bir gece) dinlendirin. Karbonat ve kimyon etle bu süreçte bütünleşecek, et suyunu hapsedecektir.

Ingredients:
500 grams twice-ground beef (beef-lamb mixture with 20-25% fat content; brisket or ribs are preferable)
1 teaspoon baking soda (This is the most important ingredient for giving it a supple, firm texture)
1 teaspoon cumin
1 tablespoon salt
1 teaspoon black pepper
2 cloves garlic (finely chopped or crushed)
1 teaspoon sweet paprika powder
100 ml sparkling water

Instructions:
In a large bowl, combine the ground beef, baking soda, cumin, salt, black pepper, garlic, and optional paprika powder. Without adding any binders (bread, egg, breadcrumbs) or extra oil, knead thoroughly by hand for at least 10-15 minutes. The more you knead, the more chewy and tender the meat will become.
Cover the kneaded ground beef and let it rest in the refrigerator for at least 4-5 hours (or overnight if you have time). The baking soda and cumin will integrate with the meat during this process, trapping its juices.
