MALZEMELER:

For this, I put 5 cups of flour in the mixing bowl. With the help of spatula, I open the middle of the flour. I add a teaspoon of salt and 1 tablespoon of yeast into it. I mix the ingredients together with very light flour. I slowly add 2 cups of warm milk.

Make sure your milk is warm at this stage. Otherwise, your yeast will not be activated. The cup size I used is 200 ml. We slowly put our milk and mix it with a spatula. We will knead the dough with a spatula until it becomes heavy. As soon as it starts to get heavy,

The more you knead your dough, the more concise dough you get, the more beautiful and delicious your products will be. We will rest this dough in balls. I roll it up to cut it into equal pieces. I cut it into 5 equal pieces with a cutting scale.

I turn the dough pieces into meringue. I cover the meringues with a clean bag and let them rest at room temperature for an hour. At the end of 1 hour, we can start preparing our pancakes. I’m putting all the meringues aside. I leave only one cloth on the counter.

I sprinkle some flour on the bottom of the meringue so that it does not stick to the counter . Then I enlarge it a little by hand. I open it as thin as I can with the help of a rolling pin. We will lubricate the phyllo that we have opened.

That’s why I melt 150 grams of butter on the other hand. We rolled out the dough large enough. I put a little bit of butter on the dough that I opened. I used butter. You can also use margarine at this stage if you wish. It doesn’t matter, it’s really beautiful and delicious.

With the help of a brush, I make sure that the dough is buttery on all sides. I cut the phyllo that I have oiled beautifully into 5 pieces. We make this pancake with lots of greenery. For this, I chopped 2 Bunch Fresh Onions into small pieces.

I put 100 grams of curd cheese in it. After adding a teaspoon of paprika, I mix all the ingredients. I put some of the inner mortar in the middle part of the phyllo that I cut . Do not use your hand cowardly at this stage.

Since the volume of the green onion I put in it will decrease, I put it in plenty. I start from the tip and close it on the inner mortar. Then I go all the way to the beginning by folding it.

I take the piece I folded and put it on the other piece I cut. I put this on the side and wrap it up to the head. I’m going to wrap all the pieces this way. I’m going by folding the piece in my hand.

When I come to the other piece of dough, I turn it over and fold it all the way to the end. I leave the big and smooth piece of dough for last. Finally, I fold it and sprinkle some flour on the tray.

I put the dough I shaped on the tray and cover it. I want to show you once again. I put a piece of stuffing with lots of greenery on one of the pieces, then I fold it into a square and go towards the end.

I reverse it before moving on to the other parts. In the same way, I fold all the dough until the end. At this stage, take care to stretch and fold the dough. This way, your pancake will be thinner and more layered.

Whatever process comes into your arms for you, do it that way. I cooked all the pancakes after I opened them. We opened all of our pancakes and set them aside. We put our pan on the stove and it got hot.

I lubricate the bottom of the pan with the help of a brush from the butter that I have melted. I put the pancake in the hot pan. The bottom of our stove will definitely be on medium heat.

If you cook it on very high heat, it will burn on the outside and not cook on the inside. We have oiled the bottom of the pan, and I am lubricating the top of the pancake with butter. In this way, we will fry better.

After cooking one side of the pancake a little, I turn it over immediately. We cook the pancakes in a controlled manner by turning them frequently. Thus, it becomes tastier and more beautiful. Since we lubricate the bottom and top with butter, we add flavor to its taste.

We cooked our first pancake and we take it from the pan. We cook the second and the rest in the same way by lubricating the bottom of our pan. Our pancakes were cooked beautifully. I also want to show you its inner texture. I cut it into quarters with the help of a knife.
