Hey Friend, today we are spending the day together in my cottage kitchen for a Winter Baking Marathon. We are baking three types of bread, white, maple oat and cinnamon raisin. We are also baking cinnamon rolls, parker house rolls and making a fresh batch of granola. Come hang out, get some baking inspiration and motivation and a few new recipes too!

Today’s Recipes:

Granola
1 cup organic coconut oil
1/3 cup honey
1/3 cup maple syrup
(heat on stove top until melted)
1/2 tsp vanilla
pinch salt
4 cups organic sprouted oats
1/2 cup organic sprouted pumpkins seeds
3/4 cup chopped walnuts
Mix together and spread on a baking sheet. Bake at 300 for up to 30 minutes, stirring every 10.
White Bread
Sandwich Loaf: Makes 2 Loaves
Mix 2+3/4 C of warm water with 1.5 Tablespoons of active dry yeast and 1 Tablespoon of sugar. Allow to sit for about 5 minutes until bubbly. Add in 1/4 c of honey 2.5 tsp salt and 1/4 C of either butter/oil. Finally add in 5-6 cups of flour kneading for 8-10 minutes.
Place dough into greased bowl for one hour.
Divide dough in half, shape into 2 loaves and place in greased pans. Let rise one more hour until it has reached the top of the pan or just above.( it will rise more in the oven)
Bake at 350 for 30 minutes until golden brown.
Let sit for 5 minutes before removing from pans and brushing butter on the crust.
Maple Oat Sandwich Loaf(Jill Wingers)
1 cup rolled oats
½ cup maple syrup
¼ cup ½ stick butter
1 tablespoon honey
2½ teaspoons salt
1 teaspoon ground cinnamon
2 cups boiling water
1 tablespoon active dry yeast
5½ cups all-purpose flour
INSTRUCTIONS
In a large bowl, combine the oats, maple syrup, butter, honey, salt, and cinnamon. Add the boiling water and let sit for 15 minutes.
Stir in the yeast and flour to form a soft dough. Knead for 8 to 10 minutes, or until the dough is smooth and satiny.
Cover and let rise for 1 hour in a warm place.
Divide the dough in half, shape it into two loaves, and place each loaf into a greased 9 x 5–inch loaf pan. Let the loaves rise until they poke up about an inch above the rims of the pans, 1 to 1½ hours.
Preheat the oven to 350°F. Bake the loaves for 35 to 40 minutes, until golden brown.
Cinnamon Rolls:
1 cup warm milk
2 1/4 teaspoons active dry yeast
1 tablespoon brown sugar
4 tablespoons salted butter, room temp
3 eggs
3 1/2 -4 cups all-purpose flour
1/2 teaspoon Redmond’s Real Salt
Mix milk, yeast and sugar and allow to activate for 5 minutes. Combine all other ingredients with yeast mixture and knead for 5 minutes. Allow to rise for 1 hour. Roll out dough into a 12×18 inch rectangle and spread 6 Tbsp butter over dough. Sprinkle a combination of 1 cup brown sugar and 3 tbsp cinnamon over the butter. Roll up and cut into 1 inch thick circles, place in buttered 12″ skillet or a 9×13 pan. Allow to rise for 25 minutes. Pour a 1/4 cup of heavy cream over the rolls and bake at 350 for 25 minutes.
Icing:
6 tbsp butter
1.5 cups powdered sugar
1/4 cup cream cheese
1/2 tsp vanilla
pinch salt

These are some of my favorite videos that you post. As a pastry chef whose specialty is breads, I have to tell you that your loaves and rolls are always so gorgeous. You have quite a natural talent for bread.
Another video that leaves me feeling calm and relaxed but ready to tackle some baking! Today I’m whipping honey (from your other video and my plan is to make a jar of biscuit mix to go into a basket with some other ready to go mixes for my nieces birthday. Seeing the bread today has me thinking 🤔 perhaps I should start the day with getting some bread dough going for the weekend. 😊 the cinnamon rolls and raisin bread spoke to me lol perhaps because I haven’t had breakfast yet. They turned out beautifully!

When I make cinnamon rolls, I like to cut them with a pizza cutter before rolling them! Roll them one at a time and it saves so much time vs rolling then cutting!

Oh my, you had my mouth watering the whole time except for the cinnamon raisin bread. Not a raisin fan but everything else looked so good. I love homemade bread. I am a diabetic and try to eat low carb. I am trying to learn to make bread with almond flour. I have no success yet, but I am determined because bread is what I miss most of all. Thanks for the inspiration. Bless your sweet family.

you might to invest into some new mixer blades. the dough hook is done to the bare metal so I believe that is not very safe. I had to replace my paddle because it did the same thing.
