We’re back in Val di Fiemme, exploring the region’s rich gastronomic traditions ahead of the 2026 Milano Cortina Olympics. Augusta is here to show us how to make menudoli, a deliciously cheesy pasta that’s a local speciality but still a bit under the radar outside the region. It’s easy to prepare and absolutely tasty. This is Augusta’s recipe:

For the dough:
300g Kamut flour
3 eggs
1 tablespoon olive oil

For the dressing:
100g Puzzone di Moena cheese
50g butter

  1. Perhaps I'm missing out on other channels out there that I don't even know exist, but I am truly grateful to you Vicky, for helping documenting, if not preserving, these traditional foods. I'll chalk it up as one of the many contributions of Britain to world cuisine 🙂

    Also, re the value of "pasta al burro": a plate of high quality, well cooked pasta, with good melted butter and grated cheese is the ultimate comfort food for Italian children, same as the American mac & cheese.

    But here's the thing, if it's well executed, even for an adult it's at the same level of more celebrated dishes, like Amatriciana or Carbonara, and it does help that in Trentino, like in other places in the mountains, butter and cheese are just a step above.

  2. I was familiar with Kamut but did not know it was a brand name. I just looked it up, and the generic name for it is either Khorasan wheat or Oriental wheat (Triticum turgidum ssp. turanicum).

    I also had to look up "maltagliati" and was amused to see it means "badly cut." I got the "mal" part of it, but I don't know enough Italian for the rest of it. Searching for "menudoli" mostly turned up recipes and articles for menudo — not even remotely related!

  3. Augusta is another dynamic woman. Thank God you chronicle these ladies. Running a furniture company with her husband and now her children, water aerobics twice a week, and fresh, whole ingredients show the benefits in Augusta. This is a pasta I am not familiar with, same with the cheese, but I can practically smell the aromas from here in Pennsylvania. Thanks for another great episode!

  4. Another reason to watch this show. These women are so vibrant and beautiful healthy. I don’t think we will be in their state here in Canada. 🇨🇦. She has always been active and that is indeed integral part of health. We have too much large cities that require us to drive. And of course how can you go wrong with pasta butter good butter and cheese. All these are made locally with healthy ingredients. Bless her heart❤
