    Chicken:
    – breast
    – Salt
    – Black pepper
    – Red chilli powder
    – Chilli flakes

    Coating:
    – 2 eggs
    – Flour ( salt + black pepper)
    – Breadcrumbs

    Parmesan sauce:
    – 1 tbsp oil
    – 1 + 1/2 tbsp butter
    – Garlic chopped
    – Onions chopped
    – 1 tomato grinded
    – 4 tbsp tomato puree
    – 2-3 tbsp cream
    – Salt
    – Black pepper
    – Red chilli powder
    – Chilli flakes
    – Basil (you can use coriander)

    White sauce:
    – oil
    – Garlic chopped
    – Milk
    – Cream
    – Salt
    – Black pepper
    – Chilli flakes
    – Chopped coriander

    Method:
    Cut the breast piece into 2 parts and flatten it with a hammer. Apply spices on both sides and let it rest for 30-60 minutes. For coating, dip the chicken breast piece in flour and make sure to shake off the excess. Then dip it in the egg and coat it with a generous amount of breadcrumbs. I used homemade breadcrumbs for the best results and crispiness. Fry on medium heat for 5-6 minutes on each side, or until golden in color.

    For the Parmesan sauce, add oil and butter to a pan, then add chopped garlic and onions. Sauté for 1-2 minutes, making sure they don’t turn brown or golden. Then add tomatoes, tomato puree, all the spices, and some water. Cook for 3-4 minutes or until the water has completely evaporated. Add cream according to your preferred thickness, and cook for another 1-2 minutes. Let it cool down, then add chopped basil or coriander.

    Add a generous amount of Parmesan sauce to each patty, top with thick slices of mozzarella, and bake until the cheese turns golden.

    Assemble everything and enjoy!
