Coq Au Vin Recipe:
For the marinade:
4 chicken thighs
4 chicken legs
3 cups burgundy or pinot noir wine
8 sprigs of fresh thyme
20 pearl onions peeled
For the sauce:
Chicken from above
3 cups chicken stock
3 cups burgundy or Pinot Noir wine (reserved from above)
6 strips of thick bacon cut into strips (lardons are preferred if you can find them)
3 tbsp cooking oil
4 tbsp unsalted butter
3 tbsp all-purpose flour
4 medium-sized carrots cut into oblique shapes
5 cloves of crushed garlic
2 tbsp tomato paste
8 sprigs of fresh thyme
20 pearl onions peeled
8 oz button mushrooms cleaned with stems removed
Salt and pepper to taste
Chicken Tikka Masala recipe:
1st Marinade:
2 pounds of chicken thighs
2 tbsp fresh squeezed lemon juice
3 tsp Kashmiri chili powder
3 tbsp ginger garlic paste
2 tsp kosher salt
2nd Marinade:
3/4 cup plain yogurt
1/4 cup mustard oil (sub with another high smoke point oil)
1 tsp turmeric powder
2 tbsp ginger garlic paste
2 tsp garam masala
Tomato Gravy:
3 tbsp avocado oil
3 tbsp unsalted butter
1/2 tsp cumin seeds
2 red onions diced
2 birds eye chilis or dried red chili
1 tbsp Kashmiri chili powder
1 1/2 tsp ground coriander
2 tbsp ginger garlic paste (Not seen in the video but this should be added to the gravy)
2 tsp kosher salt
1 tsp white sugar
2 pounds sugar bomb cherry tomatoes
2 1/2 cups water
1 tsp kasuri methi (dried fenugreek leaves)
2 tsp garam masala
1/2 cup heavy cream (add more if you want it creamier)
Garnish with cilantro leaves
Garlic Naan:
2 tsp active dry yeast
1 tsp sugar
1/2 cup lukewarm water
1 large egg
1/3 cup avocado oil
1/4 cup plain yogurt
2 1/3 cups all-purpose flour
1 tsp salt
Garlic Butter:
1 stick unsalted butter
5 cloves minced garlic
3/4 cup chopped cilantro
1/2 tsp salt
Chicken Pan Sauce recipe:
1 medium shallot finely diced
2 garlic cloves sliced thinly
2 tbsp finely sliced chives
1/3 cup dry white wine
1 cup chicken stock
2-3 tbsp unsalted butter
2 tbsp finely sliced chives
Juice of 1/2 lemon about 2 tsp
Rosemary salt recipe full batch
1 cup kosher salt
14 sprigs of rosemary stripped
8 sprigs sage stripped
3-5 cloves of garlic (3 if they are big and 5 if small)
1 lemon zested

1/2 cup kosher salt
7 sprigs of rosemary stripped
4 sprigs sage stripped
2 cloves garlic
1/2 lemon zested
Rosemary salt weighted recipe
250 grams of kosher salt
8 grams of fresh sage leaves

For your rosemary salt recipe can I use dried herbs instead if I don't have fresh available?
In French, a single 'S' between 2 vowels makes the 'Z' sound, as in Creuset.
I'm not satisfied until 'Gespar' comments here.
I love to double the Rosemary in your salt recipe and mix in the kosher salt by hand after processing the herb and lemon. Gives me more control with the seasoning.

Sorry but you said that you didn't drink wine🍷. I can assure you that whether you're drinking or simply cooking with Wine it makes a massive difference. A garbage bottle of wine for a $1 vs a bottle of wine for $20 – $40 dollar bottle is a considerable difference. If you're not willing to drink it, then why would you cook with it??? Your logic makes absolutely zero sense in cooking with any wine.
