    Let's obtain a soft, smooth dough that doesn't stick to our hands. Immediately divide the dough into 4 pieces, shape them into balls, cover them, and let them rest for 15-20 minutes. Meanwhile, for the filling, finely chop and wash the leeks. Sauté 1 tablespoon of tomato paste in half a teacup of oil until fragrant. Add the leeks, season with salt and spices, and stir. Add half a teacup of water. Cover and cook until the liquid is absorbed. Roll out the rested dough into a 35-40cm circle. Fold in butter or margarine as shown in the video, brushing each layer generously with oil. Prepare 4 dough balls in the same way. Cover with plastic wrap and chill in the refrigerator for at least 20 minutes. Remove from the refrigerator and dust with a small amount of flour. Roll out each dough into a rectangle, divide in half, add the filling, roll it up, and place on a baking sheet, spacing apart. Brush with 1 egg yolk and 1 teaspoon of milk. Score each with a sharp knife or razor blade. Bake at 200 degrees Celsius. Enjoy!
