For the Marinated Chicken:
2 tbsps water
3 cloves garlic, grated
1 heaping tbsp white miso paste
1 tbsp fresh ginger juice (from young ginger)
1 tbsp light soy sauce
1 tbsp honey
1/2 tbsp cornflour (cornstarch)
1 tbsp sesame oil
3 bone-in chicken thighs (approx. 700g / 24.7oz)

For the Roasted Apples and Garnish:
2 apples, peeled and sliced
A handful of cranberries or pomegranate seeds (optional)
3–4 sprigs rosemary (reserve some fresh sprigs for garnish, as roasted rosemary darkens in colour)
