It’s Dumpling Week on NYT Cooking! Five of our staff writers and frequent recipe developers share the dumpling recipes they love as a celebration of Lunar New Year.

Can you wrap just about any filling in dough and consider it a dumpling? These Chocolate Sesame Dumplings from Genevieve Ko prove you can. Lightly salted melted chocolate, creamy like a truffle, is stuffed into chewy homemade wrappers, naturally sweet from glutinous rice flour. Taking cues from black sesame treats often made for Lunar New Year, these sticky steamed dumplings include toasted sesame oil in both the filling and wrapper. Making dumplings from scratch is a fun group project and these are especially great for kids. The dough is the easiest possible kind to shape — you don’t need a rolling pin; it’s just rolled into balls and then pressed into flat rounds by hand.

  1. I've been waiting for this recipe! I absolutely loved everything about dumpling week. The beginning bit here about evolving traditions was really nice to hear. I feel like I learned something valuable to add to my dumpling technique canon each video – little fat belly. got it.

  2. i love this mentality of accepting that the next generation grows up experiencing cultures from multiple sources and you don't have to compromise between the 2, it's an evolution and that's a beautiful thing
besides, a big peeve of mine is people that gatekeep what food 'should' be like so this is a great creative way to make dumplings using familiar ingredients!
