Spaniard here, I really enjoy my eggs fried in abundant olive oil, no need to flip or move, you can baist the yolk a little, borders a little crispy a touch of salt when the egg is finished, and if it's done in a the kind of black speckled frying pan most grandmother had when my generation were kids even better.

  2. I will definitely try these. I usually do number one. The last one with chili oil looks really good. Bulgarians make eggs panagyurishte. Poached eggs over yogurt (with salt and microplaned garlic added) and topped with paprika flavored (clarified)butter and grated Bulgarian feta. I’ll be interested in seeing how the chili version tastes in comparison.

  3. Not going to lie, I skipped over this one when I first saw it in my feed because…. well, I've been cooking eggs every day for years (professionally and at home!) – what could I possibly learn? Never underestimate Chef Kenji, didn't think about the heavy cream aspect. Really interesting and so tasty. A new favorite. Also, sobriety looks great on you dude. Thanks for continuing to share all your food knowledge for free with everyone

    'heres a simple recipe you or your grandma did, it only requires 15 ingredients you definitely dont have, dirtying 18 dishes, and 30 minutes to make a meal that wont fill you up'
