Notes
Kuşbaşı yerine dana kaburga da kullanılabilir, pişirme süresi biraz uzar. Sivri biber yerine yeşil biber kullanılabilir, daha az acı olur. Taze fasulye mevsim dışıysa dondurulmuş fasulye ile de yapılabilir, bu durumda pişirme süresi kısalır.

2 medium zucchini, diced
3 medium potatoes, diced
2 carrots, diced
1 large onion, coarsely chopped
3 long green peppers, sliced into rings
2 medium tomatoes, peeled and chopped
2 tablespoons tomato paste
4 cloves garlic, crushed
4 tablespoons vegetable oil
1 teaspoon salt
0.5 teaspoon black pepper
1 teaspoon red pepper flakes
2.5 cups hot water

Sauté the meat: Heat 4 tablespoons of vegetable oil in a large pot; add the 500 grams of cubed beef or lamb and sauté over medium-high heat until the meat releases its juices, reabsorbs them, and browns on all sides.

Add onion and garlic: Add the large onion (coarsely chopped) and sauté until soft; then add the crushed garlic and sliced green peppers, sautéing for another minute or two.

Sauté the tomato paste: Add the tomato paste and sauté for 2–3 minutes until the raw smell is gone and the oil separates.

Add firm vegetables: Add the diced potatoes and carrots, sautéing together for 2–3 minutes; then add the trimmed green beans and diced zucchini.

Add tomatoes and spices: Add the peeled and chopped tomatoes, salt, black pepper, and red pepper flakes, then stir. 6
Add water and bring to a boil: Add 2.5 cups of hot water; once it starts to boil, reduce the heat.

Cook over low heat: Cover the pot and cook over low heat, stirring occasionally, until the vegetables are tender and the meat is soft. Add a little more hot water if necessary.

Let rest and serve: Remove from the heat, let it rest for 5 minutes, and serve hot—it pairs well with rice or plenty of bread.
Notes
Beef short ribs can be used instead of cubed beef, though the cooking time will be slightly longer. Green peppers can be used instead of pointed (Sivri) peppers for a milder flavor. If fresh green beans are out of season, frozen beans can be used; in this case, the cooking time will be shorter.
