If you mix corn flour and some more regular flour to it before frying, it comes out nice and crispy.

I think brother that the wash step was about an egg or milk wash for the seasoning to hang on the chicken not literally washing the chicken. This is the reason it lacks the crunch.

We have that too in Indonesia. When making ayam tepung, we use seasoned flour by Sasa, but Mama Suka is the GOAT. It saves us more time than having to dust it with flour, then to the egg wash, and back into the flour.
Nobody fries chicken better than black folks.
