You should get a pot filler over your stove. OMG pot fillers save your back especially with very large pots full of water.
I have a bad back and neck and cannot lift anything heavy from the sink to the stove. My husband put in a pot filler for me and it is a life saver. Get a pot filler for sure.

Why don’t you steam them? That would soften them down and make them pliable to shape your burritos. They look delicious.
I still had not gotten used to cooking for just my husband and myself by the time our last daughter left the nest. Then he passed unexpectedly Aug 2024 and now it’s just me I really don’t know how to cook for just me. For some reason I feel guilty cooking a full meal for myself. So now when I do cook I cook what I will eat for myself meal that day and then usually leftovers for the next day. But I always have enough left for another meal so I will do what Becky does and prepare it and freeze it. If it’s not a one pit meal I freeze it individually in my seal meal machine so if I made a roast and don’t feel like carrots and potatoes I can pick something else out or make some noodles or rice that don’t take long to cook up. Thanks for the ideas Becky.
Try warming the tortillas in the microwave to soften them up. I do that with store bought tortillas.

For the McGriddle pancake muffins can we use all-purpose flour or a combination of all-purpose and bread flour I don't have access do freshly milled flour at this time?
Use an oversized muffin pan to make eggs instead. Just oil and crack into each well and season. Cook the same way. That way they are round without any waste and not scrambled
Lunch idea for when your tomatoes are ready. I love bagel with regular or garden vegetable cream cheese with shaved or really thin ham toasted in the oven then a slice of tomato on each half. 😊

Are you familiar with the mayo recipe where you put 2 whole eggs in a quart mason jar, add 2 TBL's white vinegar, 1 teas. salt and 2 cups oil? I use a blend of about 3/4 cup olive oil and 1 1/4 cup organic sunflower oil (so the olive oil isn't overwhelming) use an emersion blender to pulse, until thick and emulsified. You can cut the recipe in half and make it in a pint jar. When I found this recipe years ago, I was on cloud nine. Love it! God bless !

I'd love if you could add reheating instructions to all of your recipes! I'm always afraid I'll ruin something like this if I don't have a rough idea of how to reheat it without it tasting not "right!"

When using fresh milled flour you have to let it sit for about 15 minutes for the flour to absorb the liquid then adding more flour will make them moister. Put the tortillas in the microwave for a couple of minutes covered with a wet paper towels, that will soften them.
If I don't have fresh mill flour, is the ratio the same with store bought wheat flour.

You could chop up the excess egg after cutting the rounds and make egg salad
For the left over egg from the sandwiches use them to prep another freezer breakfast like breakfast bowls egg scraps, cubed potatoes, and peppers onions and protein of your choice! Wala new meal prepped

Becky, how long were the scrambled eggs in the oven? I’ve also seen cracking whole egg on the pan and baking those. Just not sure for how long.
Whenever I'm doing the meal-prep breakfasts, I cook the eggs in the oven on a sheet pan. I don't bother cutting in circles either. I do breakfast sandwiches, or "pockets" with crescent roll dough. Or sometimes, breakfast pizza!
