Thanks so much for this! And I can confirm that even regular white mushrooms chopped fine like that add AMAZING umami to these kinds of dishes! When I make your soy sauce tteokbokki recipe, I may not always have shiitake mushrooms on hand, but using finely chopped white or cremini mushrooms bring the flavor extremely close. Mushroom power!
