I have always found mason jars to be a very clunky substitute for glass ware. I’m always disappointed when I go to a restaurant that uses jars. I think a pint beer glass is a better choice. I look for tumblers at thrift shops, tag sales, etc.
You should add some lemon juice to the beans when you soak them over night and when you cook them add some apple cider vinegar and it helps your body digest them easier and you won’t have gas from them. I really like the taste of them as well.😀

Salting beans during cooking is not an issue., it would depend on your preference.. I salt and season the water of my beans and cook them and I never have a problem.

You should always salt and pepper your beans at the end for sure. I canned 12 quarts of tamale meat this year so that when I want tamales I can open a quart jar and make a dozen or so out of that one quart. You can also make your masa ahead of time and freeze it up to 3 months.
