For Kidney Beans Stew
Ingredients

500 gr cleaned kidney beans
1 tea glass of olive oil
2 cups of hot water
1 carrot
1 potato
1 onion
1 teaspoon of tomato paste
1 clove of garlic
Juice of half a lemon
1 teaspoon of granulated sugar
Salt
For the topping

4 sprigs of parsley
Kidney Beans Stew
How to Make
Chop the onion into cubes and fry in olive oil until it turns pink. Grate the garlic and mix it into the onion.
Add tomato paste and fry for 2 minutes. Dice the potatoes, cut the carrots into rounds and add them to the pot with the kidney beans.
Add salt, sugar and lemon juice. Add hot water and cover the pot and cook over low heat until it softens and absorbs the water.
Remove from the stove and let it rest for 15 minutes, then transfer to a serving plate. Garnish with finely chopped parsley and serve. Enjoy.
