Etli Soğan Yahnisi Tarifi
Malzemeler
Beef and Shallot Stew
Recipe
Ingredients
Diced beef: 500 g
Shallots: 10–15 pieces
Garlic: 2–3 cloves
Tomato paste: 1 tablespoon
Olive oil: 2–3 tablespoons
Butter: 1 tablespoon
Spices: Salt, black pepper; thyme or red pepper flakes (optional)
Hot water: 3–4 cups
Preparation Steps
Searing the meat: Heat the olive oil in a large pot and sauté the diced beef over high heat for 4–5 minutes.
Absorbing the juices: Once the meat has released and reabsorbed its juices, add the butter.
Adding onions and garlic: Add the peeled shallots and chopped garlic, and sauté them together with the meat.
Tomato paste and spices: Add the tomato paste and season with salt and black pepper.
Cooking: Add enough hot water to cover the ingredients. Simmer over low heat for approximately 40–45 minutes.
Serving: Serve hot once the meat is tender enough to melt in your mouth. It pairs perfectly with rice pilaf or fresh bread.
📌 Tips
Soaking the shallots in warm water beforehand makes them easier to peel.
Avoid stirring too much during cooking so the shallots do not fall apart.
You can enrich the flavor by adding a bay leaf or rosemary if desired.
Serving with yogurt and rice pilaf completes the meal’s balanced and traditional presentation.
Air Fryer Preparation
Sear the meat: Preheat the air fryer to 200°C. Cook the meat for 10 minutes, stirring occasionally. Add onion and garlic: Add the shallots and garlic, and cook for another 5 minutes.
Mix the tomato paste and spices: In a separate bowl, combine the tomato paste, olive oil, butter, and spices.
Add hot water: Pour the mixture over the meat and close the Airfryer basket.
Cook on a low setting: Cook at 160°C for 25–30 minutes.
Serve: Serve hot once the meat is tender and the sauce has thickened.
💡 Tip
Since the Airfryer’s inner basket is compact, do not overcrowd it; keeping the pieces of meat from touching each other improves the searing quality.
Sprinkle with fresh parsley before serving and accompany with yogurt.
