Omg! I just tried the cream fried eggs. I was going to slather it in hot sauce but when I tasted it, it tasted so creamy delicious that I skipped the hot sauce. Which is like a first for me. Definitely going to get some sausages lol.

I love the olive oil fried eggs. The basting does wonders for the tops for me, adding the right amount of firmness as well as good liquid or jammy yolks. 10/10

Spaniard here, I really enjoy my eggs fried in abundant olive oil, no need to flip or move, you can baist the yolk a little, borders a little crispy a touch of salt when the egg is finished, and if it's done in a the kind of black speckled frying pan most grandmother had when my generation were kids even better.

Where do you get the chili crisp on the east coast?
I will definitely try these. I usually do number one. The last one with chili oil looks really good. Bulgarians make eggs panagyurishte. Poached eggs over yogurt (with salt and microplaned garlic added) and topped with paprika flavored (clarified)butter and grated Bulgarian feta. I’ll be interested in seeing how the chili version tastes in comparison.

When I was growing up, we always had a canister of bacon fat on the stove. Per your crispy olive oil, fried eggs… We used bacon fat in the same amount… They were insanely delicious.😅

what if you browned cream instead of butter in your cookie recipe then added the ice cube? would you get even more brown butter taste?
Best way to season a steal pan: scrum it clean, dry it, then spray with pam, flip over on an eye and let it burn off. Do again. You can bounce eggs off it like a basketball court. Waffle House master grill operator advice hete.

I have only one Teflon pan left out of health concerns . I’d love to see a comparison of other non-PTFE containing non stick pans. Fish and eggs are a challenge in carbon steel/iron pans. Thanks, love your organized and science based approach.
