It’s olive season! You wanted me to prepare cracked green olives for you and here we go! My dear followers, I saw green olives in the bazaar and I got some to prepare cured green olives for you. I’ll try to share with all its tricks and details. The olives are pretty big. We got lots of olives here but I’m going to use a 2.5 kg jar. We’ll change its water everyday and cure these green olives. Bismillahirrahmanirrahim (In the name of Allah, the compassionate, the merciful) Now we pick up a jar and crack the olives with the bottom of the jar. If you hit too hard, it cracks wide open which we wouldn’t want. We’re supposed to crack them like this instead. Play stay tuned. We’ll crack the olives and the latter steps are quite important. We filled the jar totally with olive. This recipe is for the ones who wants to cure the olives in short time. You’re gonna change its water each day for 10 days. I’ll share the rest with you. Do you think I can spill this water in? Let’s give it a shot. Bismillahirrahmanirrahim (In the name of Allah, the compassionate, the merciful) We fill the jar with water, till the mouth. We’ll refill it with water and change its water each day for 10 days. Taste it on the 8th day. If it doesn’t taste bitter anymore, you can move on and cure it. If it’s still bitter, try 10 days, or 11 or 12.. until it’s no more bitter. Please stay tuned. We’re gonna get rid of the bitter taste and start curing the olives. Our olives are no more bitter. The duration depends on the typo of the olives. Ours took 10 days. I placed lemon slices on the sides of the jar. Some may prefer citric acid. Which do you prefer? I prefer lemons. I’d love to know. We put a tablespoon of rock salt for each kilogram. Bismillahirrahmanirrahim (In the name of Allah, the compassionate, the merciful) Our jar holds 2.5 kg so we add 2.5 spoons of rock salt. And now… water. Water’s pretty crucial. Normally, when we change the water for days, we’re using tap water. But the water we use to cure the olives should be mineral water. ‘Cause the chlorine in the water may ruin the olives. Keep them in a dark and cool place for 15-20 days. Then taste it. And you may enjoy it. Shall I add some olive oil too? The olives on top play an important role. Try to keep this part full otherwise it may get moldy and ruin the whole jar. Let’s add some olive oil. Please comment below what kinds of olives you want me to prepare.
