Hello everyone. Welcome to my Nefix Food channel. Today I’ll be sharing a variety of recipes. I’ll list the ingredients used in my recipe in the description section. You can check them out there . It’s impossible to say whether a variety should have this or that ingredient . A variety is a dish we make by combining a few leftover vegetables we have at home, a repurposing dish. So, can it be made without beans? Yes, it can. Or can it be made without zucchini? Yes, it can. Today I ‘m making a meat version. If you’d like, you can follow the entire recipe without the meat . First, we’ll start by soaking the eggplant in salted water. I’m peeling my eggplant while wearing pajamas. Look, it should be a bit long and a bit thick. We don’t want the eggplant to melt while the other ingredients are cooking . I’ve prepared some salted water. I’m placing the eggplants in this water. I’ll let them sit until the bitterness is gone. 15-20 minutes should be enough. You can also place a weight on top of the eggplant to keep it submerged. First, let’s chop our vegetables. Let’s prepare our Nizam pilas (a type of rice pilaf). Then, let’s get to the stove. We’ll chop our onions. Since my onion is large, I’ll use half of them. Then, slicing my garlic like this will suffice. Moving on to my potatoes, I cut them in half. I’m slicing them medium-sized, not too large or too small, to prevent them from overgrowing and falling apart. Since my zucchini are small, I’ll cut them like this. The key here is to balance the cooking time by slicing the slower-cooking ingredients and the faster-cooking ingredients . Since the zucchini will cook quickly, I’ll slice them thickly. These are very small zucchinis, so I’m slicing them like this. If your zucchini is large, you can chop them the same way you sliced the eggplant. The zucchini is ready. I’m not thinning the peppers either. You can use the tomatoes either in a sauce or diced . My ingredients are ready. I took my beans and okra out of the freezer. My beans were already chopped. Again, I didn’t chop them coarsely. I wanted to balance the cooking time with the other vegetables, as the beans take longer to cook. Now that my okra and beans are ready, we can get to the stove. First , I put 4 tablespoons of oil in a pot and add my meat. I’ll also sauté my onion and garlic along with my meat. Let the onions and meat brown. Then, let’s add the other ingredients. After the onions and meat are sautéed, I add a teaspoon of tomato paste and sauté the tomato paste as well. After the tomato paste, let’s fry the peppers a little. After chopping the peppers a little, I add all the other ingredients. I add the zucchini, eggplant, potatoes, and my okra. I took my okra out of the freezer . My beans are beans I cut up and put in the freezer earlier. I also add my tomatoes. I add my spices and salt. I’ll explain what happened in the description. I add a glass of hot water. I’ll cover the pot. I’ll also turn the heat down to low. This is because our dish is cooked using what we call the steeping method . So, let’s cook it slowly, steeping it. Our dish is cooked. That’s it for our recipe. I checked the ingredients for even doneness . They were all cooked just right. They weren’t melted, but they weren’t raw either. It’s a truly delicious and nutritious dish. It’s a great option for those wondering what to make for dinner, and it’s a great way to use up those leftover vegetables in your fridge.
