Russian Pluck Cake ????
Dough: 1/2 cup butter 1/4 cup sugar 1 tsp baking powder 2 cups flour 1/4 cup cocoa powder
Cream cheese filling: 8 oz cream cheese 1 cup heavy cream 2/4 cup sugar 1 egg 1 tsp vanilla essence 1 tbsp + 1 tsp cornflour
Method: In a bowl, add softened butter, sugar, baking powder, cocoa powder, and egg, and beat on medium speed until well combined. Then, add sifted flour and form a dough. Grease the pan and line the bottom with parchment paper. Spread a thin layer of dough at the bottom and up the sides of the pan to form a crust.
In another bowl, add cream cheese, heavy cream, sugar, egg, vanilla essence, and cornflour, and beat until well combined. Pour the mixture over the crust. Use the leftover dough to create a scattered pattern on top of the cheesecake batter. Tap the pan gently to release any air bubbles.
*Oven settings:*
Preheat the oven to 180°C (350°F) and bake for 50-60 minutes with the lower heating element only. Once it's done, use the upper heating element to give it a slight golden color. And it's done ????
