Beef Stroganoff recipe:
1 1/2 lbs (0.7 kg) flank steak
1 tbsp rosemary salt
1 tbsp black pepper
1/3 cup (40 G) flour + 2 tbsp corn starch
2 tbsp onion powder
2 tsp garlic powder
15 button mushrooms
1 yellow onion
8 sprigs of stripped thyme
2 tbsp unsalted butter
3/4 cup (177 ml) dry white wine
1 1/2 cup (354 ml) beef stock
1/4-1/2 cup (60-120 ml) heavy cream (depending on your personal preference)
1 tbsp Dijon mustard
a dash of Worcestershire sauce
garnish with a dollop of sour cream and fresh parsley leaves

Rosemary salt recipe full batch
1 cup kosher salt
14 sprigs of rosemary stripped
8 sprigs sage stripped
3-5 cloves of garlic (3 if they are big and 5 if small)
1 lemon zested
Beef Ragu:
1 pound pappardelle pasta
3-4 pounds short ribs or chuck roast
2 tbsp olive oil
2 tbsp unsalted butter
3 carrots small dice
1 large yellow onion small dice
1/2 tsp crushed red pepper
3 oz tomato paste
1 cup dry red wine (cabernet sauvignon)
1 tbsp red wine vinegar
20 oz of quality canned tomatoes
3 cups of beef stock
6 sprigs fresh thyme
Garnish with parmesan and parsley
Salt and pepper to taste
Pot Roast Recipe:
4-5 pounds (1.8-2.2 kg) chuck roast
1 tbsp rosemary salt
2 tsp black pepper
3 tbsp high smoke point cooking oil
1 yellow onion large dice
5 cloves of smashed garlic
3 tbsp tomato paste
3 tbsp all-purpose flour
5 carrots cut into oblique shapes
1 pound (0.45 kg) of red and yellow baby potatoes
1 cup (236 ml) red wine
4 cups (946 ml) beef stock
1 tbsp Worcestershire sauce
2 tsp balsamic vinegar
2 tsp marmite
8 sprigs of fresh thyme

Just shared it with a friend. (The video. Not the meal.) Talking onions: one chef once shared the story that, when was learning, the boss ordered the kitchen to have some onions roasting. For the smell of the onions to invade into the room where the customers where. To stir their appetite.
Fun fact: when you go to a supermarket (at least here in Germany), many have a bakery, selling their produce, right at the entry: the smell of freshly baked bread makes folks hungry.
The non-coated cast iron works great so you can do this all in one pot with that type! And they are way cheaper!

Sonny, what's your beef with celery? Is it a personal thing, or why don't you like it? I personally feel like celery was the missing ingredient in my life growing up, and now in my cooking I feel like I need it so much.

This is a top tier channel. Great looking food made by somebody who is clearly having a fun time with it. Its really cool to watch someone so chill spread the love of cooking like this.
I make lazy stroganoff using beef brisket that I have precooked and frozen in portions. I thaw it in pressure cooker in broth, beef soup powder, onions, herbs etc. Thicken into a meaty gravy.
Can you freeze the rosemary salt??

Now the grovelling bit is over, can I ask, as you are an honorary Brit, would you PLEASE also include grams in your recipes and not just cups.
