SWEET POTATO AND GOAT CHEESE FILLED SPINACH RAVIOLI FROM SCRATCH ????????????
Today I am sharing this delicious homemade spinach ravioli with you. I enjoyed and had a lot of fun making it and my family loved eating it. ????????????????????????
Ingredients for the spinach dough:
1 (10-ounce) package frozen spinach, thawed and chopped
5 large eggs
4 cups all-purpose flour, plus additional flour as needed
1 teaspoon salt
For the filling:
2 cups mashed sweet potatoes
1/2 onion, finely diced
1 tsp minced garlic
4 cups of mushrooms chopped very finely (about 340 grams, 12 oz)
2 tablespoons butter or olive oil
1/2 cup chopped parsley
2 ounces creamy goat cheese
Ingredients for the sauce:
2 tbsp butter
1/2 tsp minced garlic
Fresh sage leaves
Red pepper flakes
Instructions:
Squeeze as much water as possible from the chopped spinach with your hands. In a blender combine the spinach, salt and eggs. Puree until the mixture is dark green and smooth, with few or no visible chunks of spinach showing.
In another bowl with four cups of flour, add the puréed spinach mix stirring with your hand to combine. As the mixture turns chunky, begin to knead it, incorporating enough flour to make a stiff dough for 5 minutes, adding more flour until the dough is smooth and slightly tacky but not sticky. Set aside, covered with plastic wrap, for about 20 minutes. Divide the dough into 6 equal sections with a dough cutter. Cover all of the pieces (except the one you’re working with) with a plastic wrap.
Form the piece of dough into a flat with your hands or a rolling pin to prepare it to be fed into the pasta maker. Beginning with one of the shorter sides of the rectangle, feed the pasta through the pasta maker on the first (widest) setting. Then fold the pasta dough in thirds (like a business letter). Form it flat and feed it through the pasta rollers again. Repeat feeding it to the pasta roller several times by increasing smaller settings every time until it reaches the desired thinness. This dough can be stickier and more fragile than regular flour-based pasta dough, so you might not want to roll it as thin as you would normally roll the pasta dough.
Make the filling:
In a medium pan add butter or olive oil, chopped onion, mushrooms, minced garlic, mashed sweet potatoes, and fresh parsley cook 5 more mins stirring occasionally. Remove from heat and add goat cheese, stir to combine and let cool.
Make the raviolis:
When dough is done resting, cut it into 6 pieces. Roll out each piece to form a thin layer by using a pasta press. Sprinkle some flour on the @thebellemain ravioli stamp (it is a two-piece pasta tool) and place your first sheet of pasta on top, pushing down into the holes with the plastic piece to create spaces for the filling. Fill each hole with the filling mix and put another pasta sheet on top. Use a rolling pin to press the two layers of pasta together. Start with gentle pressure to press out any air and to form a seal. Then use more pressure to cut the pasta into individual ravioli. Peel off excess dough from around the ravioli. Turn the ravioli maker over and give the mold a shake. The ravioli should easily fall out of the mold. If they don’t, tap the edge of the mold against a firm surface such as your countertop.
Repeat it until you use all the dough.
Cook the raviolis:
Add 1 tsp salt to 4-5 cups of water and boil it. Add the raviolis into boiling water and cook for 5-6 mins. While it’s cooking make the sauce. In a medium saucepan add butter or olive oil, fresh sage leaves, minced garlic, and red pepper flakes , and brown the butter stirring occasionally. Remove from heat. Divide your raviolis in serving plates and top with the brown butter sauce. Enjoy ????

4 su bardağı çok ince doğranmış mantar (yaklaşık 340 gram)
2 yemek kaşığı tereyağı veya zeytinyağı
1/2 su bardağı kıyılmış maydanoz
200 gr keçi peyniri veya tulum peyniri
Sos için malzemeler:
2 yemek kaşığı tereyağı
1/2 çay kaşığı kıyılmış sarımsak
Taze adaçayı yaprakları veya fesleğen
Kırmızı pul biber
