Dough:
* 3 cups (15 oz/426 g) all-purpose flour
* 2¼ teaspoons instant yeast
* 1¾ teaspoons salt
* ⅔ cup (5 fl oz/160 ml) whole milk, lukewarm
* ⅔ cup (5 fl oz/160 ml) water, lukewarm
Topping:
* 2 tablespoons milk (for brushing)
* 2 tablespoons all-purpose flour (for dusting)

Of course in Canada, I grew up hearing the term “buns” from my mom. Still use it today.
Around these parts: bun if you slice it in half for a sandwich, roll if you eat it with butter along side a meal. But sometimes you’ll see roll used to describe bread for a sandwich. Confounding

I like my rolls darker than the baps you made. Does it diminish the texture at all to bake them longer, or would you recommend a higher heat for a darker crust?
