  1. for biriyani, in many cultures, we put the dum (dough seal pot) on lowest heat possible without water on indirect heat and keep it for an hour or even more sometimes. this is done especially in lamb biriyani where we break big bones and add those too and it gives the time for the bone marrow to liquify and mix completely with rice.

  2. 2:10:12 you should check gordon ramsey exploring north-east India cuisine. Its nothing like you have seen before or completely different from the general idea of indian cuisine which is mostly only representative of north india. North-East cuisine is a wonderful mix of south-east asia and south asia styles of cooking. Dont use any powdered spices or masalas like in other indian cooking and ingredients are very different, mostly non vegetarian food. Its titled gordon ramsey's the great escape (check the north-east india episodes)
