First, we start by kneading the dough for our cookies. For this, I add 125 grams of butter, which I have kept at room temperature, into the kneading bowl. Then I add half a tea glass of oil, 1 egg, 2 tablespoons of granulated sugar,
Half a tea glass of water that we have kept at room temperature, and mix these ingredients a little with the help of a spatula. After mixing a little more with spatula, I add a teaspoon of salt, 1 teaspoon of baking soda, and 1 teaspoon of grape vinegar into the dough.
I pour the grape vinegar over the baking soda. Thus, we activate the baking powder. I add a teaspoon of mahlebi to make the cookies smell good and add flavor to their taste . If you don’t like mahaleb, you don’t have to add it.
I used 5 and a half teaspoons of flour in my recipe. We add our flour little by little in a controlled way. After I put some of it, I take out the spatula and continue to knead with my hand. I will add flour by looking at the consistency of the dough.

The consistency of our dough was quite good. Before shaping our cookie dough, I take walnut-sized pieces. First I press it a little with my hand and then I turn it into a meringue. Thus, the size of the cookies we have prepared will be the same. These cookies are really beautiful and delicious.

We have obtained 20 meringues. I’m taking one. First I make some rolls by hand. Then I put it on the counter and roll it with my hand. You can set its size as follows. You get one inch measure, that’s enough for us. I buy 1 straw to shape.
I glue the tip to the middle of the straw. Then I shape the straw by wrapping it around. Do not wrap too tightly at this stage. Otherwise, you cannot remove the cookies you have shaped from the straw. We gave the shape of our first cookie.

Put it on the tray that I have covered with greaseproof paper. We gave the shape of all our cookies. I add 3 tablespoons of cold water to a tablespoon of molasses. After mixing it well with the help of a brush, we spread it on our salty cookies.
I sprinkle some sesame seeds on it to make it look nicer. At this stage, you can add black cumin if you want. We also opened our oven to 170 degrees upside down. I will put the cookies I have prepared in the hot oven. Our cookies are ready to go into the oven.
We cooked it in a controlled manner in our oven at 170 degrees for 25 minutes. We expect it to be ice cold after taking it out of the oven. In this way, it becomes more choppy and more beautiful. I put the cookies I prepared on the serving board.
