This is a relatively simple composed recipe that involves a bit of finesse and quality shrimp for an ideal presentation, but overall it’s a very easy one to whip together once the puree has been tackled. Elegant with a nice blend of new and familiar flavors.
Ingredients:
3-4 Extra large shrimp (4-6ct or 6-8ct)
2 tbsp flavorless oil
2 tbsp butter
2 tbsp paprika
1 tbsp dried rosemary
2 lemon slices, chopped
1-2 pinches of salt
2 cups cauliflower
2 tbsp butter
1 cup cream or milk
1 pinch of salt
1 medium Yukon potato, diced
1/2 fennel bulb, diced
2 tbsp vadouvan curry or madras curry
1 tbsp flavorless oil
1 tbsp butter
1 pinch of salt

Saw the title, realised I had no idea what 'vadouvan' meant, so of course I clicked. Only slightly underwhelmed to learn that 'vadouvan' is 'just' a Franco-Indian spice mix, but not disappointed in the video at all

I have a little tin of a spice blend "les Indiennes" a friend brought me from Paris and I'm wondering if it's the same as Vadouvan. It has a bright "sweet" curry fragrance that seems like it was made for seafood.
