2 1/4 cup (315g) all-purpose flour
1 1/2 teaspoons (7.25 ml) baking soda
1 teaspoon (5 ml) kosher salt
1 Tablespoon (15 ml) ground cinnamon
2 teaspoons (10 ml) ground ginger
1 teaspoon (5 ml) ground nutmeg
1 teaspoon (5 ml) anise seed
1/2 teaspoon (2.5 ml) ground cloves
1 cup (150 g) bittersweet chocolate chunks (Trader Joe’s Dark Belgian Chocolate 1lb plus bar a great one to use! https://amzn.to/3VPARLc)
For Decorating:
2 small mandarine oranges
1/4 cup (60 g) white sugar
2 tablespoons (30 ml) water
2 tablespoons (30 ml) orange marmalade
1 cinnamon stick
Small plastic evergreen sprig
METHOD:
Preheat the oven to 350F (175C). Spray a 9.25 x 5.25 x 2.75 in (23.5 x 13.3 x 7 cm) loaf pan with baking spray with flour.
In a medium sauce pan, add the butter, honey, brown sugar, marmalade, and water. Heat on medium-high until melted and smooth. Transfer to a large bowl to cool.
Meanwhile, whisk together the dry ingredients. In a medium bowl, whisk the flour, baking soda, and salt together until combined. Then whisk in the cinnamon, ginger, nutmeg, anise seeds and cloves. Set aside.
To the melted wet ingredients, add the oil and whisk to combine. Then add the eggs, one at a time, whisking in between each addition.
Add the dry ingredients in thirds until combined.
Stir in the chopped chocolate. Transfer the batter to the prepared loaf pan and bake for 55-60 minutes until a toothpick comes out clean. Allow to cool completely.
Meanwhile prepare the candied oranges.

Looks wonderful but I’m confused. The printed recipe says 2/3 cup honey but the video says 1/2 cup. Please clarify.
Sounds and looks fabulous! Merry Christmas!
Oooh la la😅😅😅😅…I want to make this now, but I'm out of marmalade and anise. I really want to make this. Oh well , tomorrow is another day. I'm not going out to the store, too cold😅😅😅😅….merci Beth. 😊😊
This recipe looks so good! Can’t wait to try it. I pre-bought your book and am looking forward to getting it next year.
Merry Christmas! 😊
Looks delicious! Merry Christmas, Beth!
Hmmm I like this version! Might have to sub Agave for honey… allergy.
Perfect timing Beth! Thank you!
A question, Beth! Sometimes these European recipe ingredients need to be adjusted for US and Canada….to help the moisture and rising, etc. Will this one work well over here, exactly as it is set out in your video? It looks wonderful!
Joyeux Noël, mon belle Beth. 🤗🤗🤗
What a beautiful and easy hostess gift to bring. THANK YOU, BETH! You're the best! Happy Holidays!
Another great one Beth😊❤️ Thank you for all your fabulous recipes, and Merry Christmas to you and your family ❤🎄🎁
Wow, Beth, another WINNER!! Is this recipe in the book? I can't wait to try it since it's so different from all the usual Christmas cakes and bread. Thank you so much for sharing it. Wishing you, the girls, and Phillippe a Merry Christmas and a Happy New Year. Bisous and see next year 😘😘
Merry Christmas ❄️🎄💕
🇬🇧🥰💐
Oh that recipe looks divine. Must make😍
Fabulous merry Christmas 🎄🎁🎄🎁
What a delightful recipe. Orange in cakes is such an underrated flavor
That looks amazing. I reckon it would be nice as the base of a trifle, soaked in marsala with mascarpone and custard and cream on top with the caramelised mandarins to garnish.
Happy Holidays!!!! The gingerbread looks so good!!!!
Merci! I just made it and wanted to post a pix but not allowed!
Joyeux Noel! The spice bread looks delicious! Thank you for showing us how!
Hi Beth I pre order the cook book in Amazon be here June cant wait to start browsing
❤❤❤🎄🎉🎁☃️🥂
Oooo…you had me at anise! 😂 This looks so good! I was so sure I had marmalade and then… disappointment. I guess I decided not to order it or they were out (seems unlikely) last time. I have an order scheduled for Monday so I think I'll add it and surprise myself with your beautiful bread for Christmas! I love gingerbread and the addition of the orange is just the nudge to take it over the top! 🍊
Merry Christmas, Beth. ✨🎄✨
Have to try this, Beth! Yummy!! Beautiful environment for the filming! Soft, calm Christmas colors!
Merry Christmas! ✨🌲✨
Can’t wait to see what France holds for us in 2025! 💖
Ooh just in time. Made your gingerbread cake last yr and now I'll make this one. Thanks again for the recipes. Merry Xmas
Just a quick question/correction…..2-¼ cups AP flour is actually 270 gm. Recipe says 315 gm. Which amount is correct? It looks so good….hoping to make this tomorrow!
I just made it!! Delicious!
