Nevsehir Mantisi Welcome to Mutevazi Lezzetler video pages at this episode, we are sharing a traditional and regional recipe “Nevsehir Mantisi” let’s see the ingredients now 1/2 pack instant yeast 1 + 1/2 cup warm water 1 tsp granulated sugar 1 tsp salt and enough flour

For the filling; 8.8 oz minced calf meat, medium fatty 1 onion, medium size 3 tbsp sunflower oil 1/4 tsp salt for the upper side; 1 cup of yogurt 2 or 3 garlic cloves 1 cup of water 2 tbsp vegetable oil 1 tsp red pepper powder 1 tsp dried mint and some salt

I’m starting by preparing the dough I’m pouring 1 + 1/2 cups of warm water into the mixing bowl 1 tsp sugar… 1/2 pack of yeast… I’m mixing it by fingertips firstly, until the mixture dissolves I’m adding the salt also

I’m adding flour into the mixture little by little, until the mixture reaches soft consistency I’m kneading… the dough is not too hard and not too soft even… it has a proper consistency for rolling out… now, I’m covering… and I’ll be resting it for about 1 hour at room temperature

While the dough is resting, I’m preparing the filling mixture I’m dicing the onion into very small pieces… I’ve diced the onion by this way I’m pouring 3 tbsp of vegetable oil into the pan I’m placing the onion pieces into the pan also

I’m frying it over medium heat, until the onion loses its fresh color the onion is fried and now it is the order of minced meat… I’m adding 8.8 ounces of minced medium fatty calf meat as you see, I’ve cooked the filling mixture…

For the other “manti” recipes generally we are not cooking the filling mixture these are regional nuances I’m making it stay in small balls by mixing constantly the meat is roasted, so finally I’m adding 1 tsp salt I may remove it from the stove after mixing it for a few times

The resting the is over now, so I may uncover it I’m dividing it into 2 pieces I’m reversing it for a few times it will not be very thin dough a small tray size is enough yes, it is enough I’m placing half of the roasted and cooled mixture of the minced meat…

Over the dough now, I may roll the dough but, without squeezing too much… not too loose also… I’m enlarging it a bit the tray is greased already I’m slicing the roll very thin and placing these pieces into the tray by getting the meat side of the slices

I’m rolling out the second piece of the dough also… and I’ll be repeating the same processes for the second piece also after placing the slices by this way… I’ll be baking it in dark pink color in the preheated 374 F but I’ll not allow it turn into red too much

While cooking the pastry, let’s prepare the sauce I’ll be whisking… the mixture of yogurt and 1 cup of water until the mixture smoothens totally after smoothening the mixture… I’m adding 3 tbsp sunflower oil… 1/2 tsp salt… 2 or 3 cloves of garlic and mixing it for a while… so the sauce is ready!

The pastry is removed from the oven also pastry dries and hardens if you bake it with very high heat… so sometimes people pour broth all over the pastry to soften it but at our recipe the pastry doesn’t harden too much, so there is no need to do that

I’ve placed it into the service plate… I’m pouring the mixture of yogurt all over the pastry I’ll sprinkle dried mint and red pepper powder all over also… but, if you wish, you may fry the spices with some butter and then pour all over also it is ready to serve right now
