“Mold Aged Beef Carpaccio” üzerine 39 yorum

  1. After getting so many comments about the mold aged beef on my last video, I decided to make a carpaccio to show you it’s ok to even eat this raw when it is properly prepared.

    This is the same cut from Flannery Beef that I used in my previous video. I kept it in my home dry age fridge for another two weeks, and the mold continued growing over the exposed surface where it had been cut.

    I sliced into it to reveal the beautiful marbling inside. After a quick taste, it was nutty, intensely beefy, and absolutely incredible. I carefully trimmed away the exterior, then ran it through a meat slicer to get paper thin slices.

    The prep is super simple. I trimmed off some of the fat and arranged the beef on a chilled plate. Then I topped it with fresh arugula, cherry tomatoes, and creamy burrata. To finish, I drizzled everything with good olive oil and a balsamic vinaigrette for a little acidity.

    I already love beef carpaccio, but this mold aged version was on another level. The toppings complemented the beef beautifully, but honestly, I could have eaten it by itself with just salt.
