Eggnog cheesecake
Ingredients:
Crust:
500 mL (2 cups) graham cracker crumbs
30 mL (2 Tbsp) granulated sugar
125 ml (½ cup) butter, melted
Cake:
3 – 8 ounce packages cream cheese
250 mL (1 cup) granulated sugar
45 mL (3 Tbsp) all-purpose flour
175 mL (¾ cup) eggnog
2 eggs
30 mL (2 Tbsp) rum
2 m L (½ tsp) ground nutmeg
Method:
Preheat oven to 350°F (180°C).
Mix graham cracker crumbs, sugar, and butter; then press into the bottom and up the sides of a 9” spring form pan.
Bake 10-15 minutes until light golden, then cool to room temp.
Place eggnog, rum, eggs, flour, sugar, nutmeg, and cream cheese into your blender.
Turn machine on to High or liquify, and blend for 30 seconds or so – until smooth.
Pour mixture into pre-baked crust and bake 45-50 minutes, or until cake is barely firm to the touch.
Cool to room temp and remove ring.
Cover and refrigerate until completely chilled before serving.

Who cares about the crack. It disappears so quicky when it tastes good.
I deal with cracks in the cheesecake by blending it all up in my mouth.
The outside edges of the cake heat up faster than the center of the cake, the edges solidify faster and then separate from the center and form cracks.
as far as i know the key is to put water on a tray and then put the cheesecake on top of it…seems like the moisture helps to get less cracks. I do not care about the cracks but i care about the flavor and texture…cracks can be hide with melted chocolate on the top or with whip cream…

I couldn't justify the price of a Blendtec, but I did buy the DVD of the YouTube series when they offered it.
I haven't made a cheesecake in years, but may be tempted to make this one. It sounds delicious and I truly love cheese cake. As for cracks I wouldn't worry about them. But when I did make cheesecakes (it was back in the 60s and 70s) I recall the recipe I used (Betty Crocker Cookbook) said to let it cool in the oven for an hour after finished baking, which was to prevent cracking. It warned strongly not to open the oven door for an hour. I don't recall seeing cracking. I do recall one time tho that I forgot the one cup of sour cream that was to go in. No one could tell the difference.
Just looked up the blendtec when they blended an iPad from 14 years ago. Pretty corny and funny but thats a powerful blender. That being said I really want try this one. Eggnog is one of my favorite parts of the Christmas holiday season.

Sometimes they just crack, but I have great luck with cheesecakes that I throw together using a whisk. I add the eggs last and gently mix until I no longer see eggs. Beating eggs too much introduces a lot of air into the batter. Sounds and looks delicious. I’ve been looking for an eggnog cheesecake recipe. Thanks!
I love cheesecake and eggnog, so this is right up my alley! Maybe using a water bath when you were baking it would have prevented the cracking. Anyhoo, as my mom would have commented, "Well, you've got to break it up to eat it anyway."

I'm sure someone else has said this: cheesecake often comes with a topping, traditionally sour cream or strawberry. So, I would just hide my crime.
Of course Julie brings cakes etc., with a piece already eaten, to work. Doesn't everyone do that? And everyone at work is happy to get those treats — they are likely to be extremely happy they're getting things Glen made!
Just hitting on your remarks early on about people being upset Julie takes pies with slices already out to work… They're just jealous. If I had a coworker who said "oh, my significant other does cooking videos on youtube" and was always bringing in delicious looking cakes, pies, pastries, ect, I would 100% go out of my way to be their best friend at work.

Love these desert videos. So many ideas. But could you start adding sugar substitute options as well? For those of us that have to watch our sugar but still want to enjoy these amazing treats?
I have only had small cracks but I always made a chocolate buttercream or fruit topping anyways
I find that replacing 1/2 of one of the blocks of cream cheese with room temp sour cream helps prevent cracks. If it fails, I use more sour cream to make a fast frosting for the cheesecake.
Here's a thought Glen: Drizzle caramel into the cracks to fill them.

Concerning Graham crackers: they are a north American thing and do not exist where I come from (Germany). I substitute with whole grain wheat crackers (Butterkekse).
The costa coffee shop near me seems to have replaced all its blendtecs with Hamilton Beach blenders, not sure why, but also Hamilton Beach is pretty unknown in the UK so that seems doubly odd from a maintenance and parts availability pov.
With the pumpkin pie recipe I use, it has additional egg yolks, like 3, and it cuts down on cracking.
Biggest tip to ensure your cheesecake doesn’t crack, Make one that doesn’t need baking, I find they have a much nicer, smoother texture anyway and a lot less hassle.
If those parties are too "fancy" for a test cut they sound like too much for me 😆

One year I drank a bunch of eggnog. I was obsessed with it, and as you probably expect I got sick and 🤮. I tried it a few years ago with alcohol. I’m still not over that experience from my youth.
When I’m around eggnog my brain says.
“Don’t breathe this”
Try as she might, my mother's cheesecakes usually had a crack on the top….a little fruit pie filling solved that problem. 😊

If the cheesecake cracks you can always just whip up some whipped cream and add a dollop to cover it and maybe a dusting of nutmeg and it will look super fancy
