There are certain recipes that instantly disappear the second they hit the table, and this Mexican street corn dip is absolutely one of them.

It’s creamy, smoky, a little spicy, loaded with charred fresh corn, and somehow manages to feel both rich and fresh at the same time. This is the kind of thing I make once during corn season… and then suddenly I’m making it every weekend until August disappears.

  1. Fellow English speakers. I can understand that most Spanish words are beyond your capacity to pronounce, and that's okay, but the letter h and y already exists in our language so the phonetic sounds and mouth shapes are familiar to all of us. Pronouncing a word like jalapeño "jawl-uh-pee-no" or "hawl-uh-pee-no" is akin to weaponized incompetence.

    You can all say "hall-uh-pen-yo." It's seriously not that difficult. I believe in you guys.

  2. Ingredients:
    FOR THE DIP
    5 ears of charred corn
    1 jalapeno, seeded and diced
    2 cloves garlic
    1/4 cup white onion, diced
    1/2 cup green onion
    1/4 cup diced red pepper

    FOR THE SAUCE
    1/2 cup mayo
    1/4 cup sour cream / Greek yogurt
    zest and juice of one lime
    1 tsp smoked paprika
    1/2 tsp cumin
    1 tsp salt
    1/2 tsp Cholula hot sauce (or hot sauce of your choice)
    1/4 cup crumbled feta

    Instructions:
    Char the corn over a BBQ, gas flame, oven broiler, or in a large skillet over medium heat until lightly blackened in spots.
    Let cool slightly.Slice the corn kernels from the corn cobs and add to a large bowl.
    Add jalapeño, garlic, white onion, green onion, and diced red pepper.
    In a small bowl, stir together mayo, sour cream or Greek yogurt, lime zest, lime juice, smoked paprika, cumin, salt, and hot sauce.
    Pour sauce over the corn mixture and stir until fully combined.

    Fold in crumbled feta.Taste and adjust seasoning if needed.
    Chill in the refrigerator for 20–30 minutes before serving if desired.
    Serve with tortilla chips, Fritos, crackers, or veggies.
