Hello everyone. Welcome to my channel. Today, I’m bringing you a wonderful börek recipe that anyone can make easily and easily. Without keeping you waiting too long, I’ll get right to the recipe. For my recipe, I first used half a package of dry yeast in a mixing bowl. About 5 grams. I added 1 teaspoon of granulated sugar and 2 cups of warm water . After gently mixing the ingredients with a whisk, I added about 2 cups of flour, based on my eyeballs. I added a teaspoon of salt to the flour. I slowly began kneading the dough. Be careful to add the flour gradually and in a controlled manner. I’ll share how much flour I used in the coming minutes. The dough should be soft but not sticky. I kneaded it just enough. I added a tablespoon of olive oil and brought it together. I used a total of 4.5 cups of flour for this dough. I mixed it up like this. Covered it and let it rise for about an hour. I let the dough rise for about an hour. After it’s aired out, I roll it up. After rolling it up, I divide it into 12 pieces using a dough card and prepare my dough balls. After preparing the dough balls, I cover them. After resting for about 10 minutes, I start rolling them out. I cut some parts so the video wouldn’t be too long. I let my dough balls rest for about 10 minutes. I’ll show you a little with a rolling pin first, then I’ll show you by hand later. You can prepare it either way. You can do it by hand or with a rolling pin. Rolling it out to the size of a serving plate is enough. Set it aside. You can spread it on a tablecloth. I make 23 more balls. The dough is a bit soft, so it might stick to the rolling pin. As I said, you don’t need to roll it out too much. I’ll share the part I made by hand in the coming minutes . You can make it however you like. I made 34 balls. I enlarge them and place them on a baking sheet like this . I use a little oiled cottage cheese on top. I’ll be using my mom’s mix of cottage cheese and cheese. If you want something savory, definitely use a fatty cheese. I’m expanding the dough like this with my hands. I pour about 1 tablespoon of oil, eye-wise . You can spread it this way with a brush or spread it directly with your hands. I’ve added the cheese. I’m greasing the dough like this. Then I’m placing it in the pan. Do this in whatever way feels easiest. Because the dough is yeasted, prepare 3-4 pieces. You can then re-roll them after removing the baking sheet . Or, you can prepare it this way. Lightly oil the table. After expanding it a bit with your hands, transfer it to the baking sheet like this. It will slowly roll out on its own because it’s yeasted. I’m working on this part slowly. I didn’t speed this up too much. Because it’s yeasted, it can tear if you move it too quickly. I’m showing a few more recipes for those trying it for the first time. I also place the final layer this way. I lightly greased the table. I took the dough and stretched it a bit with my hand. Then I placed it in the center of the baking pan. I pulled the edges to expand it. When shaping, you can use a knife or, like I did, a dough card. Making it with a dough card is much healthier. The dough is quite soft and can be gathered with a knife. I brush it with a little oil. Then I cut it with the dough card as shown in the video. After cutting the pastry, I brush the top with egg yolk. Let it rise for about 10 minutes. I bake the pastry in a preheated oven at 170°C (350°F) until it is nicely browned on top . The pastry came out of the oven. As you can see, it’s beautifully browned. I’ll do a texture test for you after it comes out of the oven.
