Welcome to Elif’s kitchen Today with you Adana region I want to share the recipe for roasted head, which will be one of your favourite recipes with its delicious taste Peel 750 grams of aubergines I used a small aubergine, if you can find a smaller aubergine, it will be much better.
As you can see in the video, let’s cut it into four without cutting it completely from the stem part If you are using larger aubergines, you can cut them into smaller pieces. Add a teaspoon of salt and enough water to cover it and cover it with a plate.
Let’s wait for 15-20 minutes for the aubergine to release its bitterness, then let’s take it into the strainer Let’s prepare our peppers I used about 5-6 small hot peppers, if you like hot, hot suits this dish very well. I used 5-6 green peppers and 1 capia pepper
Clean the seeds of the capia pepper and chop it into long pieces as you see in the video Cut the stalks of the chilli peppers and cut them into long pieces. I used the whole chilli pepper then let’s take about half a tea glass of oil into a large pan
Add the chopped peppers on it Let’s place it in a single row in the pan Let’s close the lid of the pan and let it fry over medium heat by turning it occasionally. Let’s take the fried peppers into the plate Place the aubergines on the same oil
Again, close the lid in the same way over medium heat I’ll open the lid from time to time Turn the aubergines Let’s make sure it’s nicely browned As you can see in the video, I do not fry the fries in plenty of oil because I fry in a little oil.
Especially as the aubergines do not absorb too much oil, our dish will be light and delicious Let’s take our fried aubergines into the plate to drain more oil I took about half of the oil remaining in the pan I don’t want my food to be heavy On the oil remaining in the pan
Let’s add 3-4 cloves of grated garlic Roast for a few seconds without burning Add a teaspoon of chilli paste on it Roast for a while Then add 3-4 grated tomatoes on it I added about half a teaspoon of salt Let it cook on low heat for about 10 minutes until the tomatoes soften
Let’s take our cooked tomatoes into a plate In the same pan we fried before Place the aubergines I don’t want to spoil the beautiful visuals. I took the tomato in a separate bowl, if you want, you can take the tomato without taking the tomato in a separate bowl.
You can add the aubergines on top As I said, I did it this way because I didn’t want to spoil its visual beauty. After placing the aubergines Spread the cooked tomato on it And let’s decorate it with the peppers we fried before then close the lid of the pan
Let it cook for about 20 minutes on low heat without adding any water At the end of 20 minutes, remove the dish from the stove And let’s put it on a serving plate As you can see in the video, it was a wonderful dish with both visual beauty and flavour.
