Patatesli Kol Boregi (Rolled Potato Borek)

Malzemeler (Ingredients):

4 adet yufka
1 kg patates
3 adet sogan
1 cay bardagi sivi yag
1 yemek kasigi biber salcasi
Damak tadiniza gore tuz, pul biber ve karabiber

Sos icin:
1 cay bardagi sivi yag
1 cay bardagi un
2 yemek kasigi tereyag
2 yemek kasigi sirke
100 ml soda

4 sheets of phyllo dough
1 kg potatoes
3 onions
1 tea cup of cooking oil
1 tablespoon of red pepper paste
Salt, red pepper flakes, and black pepper to taste

For the sauce:
1 tea cup of cooking oil
1 tea cup of flour
2 tablespoons of butter
2 tablespoons of vinegar
100 ml mineral water

Yapilisi (Recipe):

Patatesleri kabuklariyla haslayin. Soganlari ince dograyip yagda guzelce kavurun. Baharat ve biber salcasini ekleyip kavurmaya devam edin. Kabuklarini soydugunuz haslanmis patatesleri de ekleyerek iyice karistirin ve sogumaya birakin.
Bu sirada sosu, gerekli tum malzemeleri karistirarak hazirlayin.
Yufkalari ikiye kestikten sonra herbirini soslayin ve daha onceden hazirlayip sogumaya biraktiginiz ici de ekleyerek rulo yapip tepsiye yerlestirin. Yumurta sarisi ve sutu karistirip uzerine surun. Dilerseniz uzerine susam serpebilirsiniz. Onceden isittiginiz 200 C derecelik firinda pisirip servis edebilirsiniz.

Boil the potatoes with their skins on. Thinly slice the onions and sauté them in oil until golden brown. Add the spices and red pepper paste, continue sautéing. Then add the peeled boiled potatoes, mix well, and let it cool. Meanwhile, prepare the sauce by mixing all the necessary ingredients. Cut each phyllo sheet in half, then brush each half with sauce and add the previously prepared and cooled filling. Roll them up and place them on a baking sheet/tray. Mix the egg yolk and milk, then brush it over the rolls. You can sprinkle sesame seeds on top if you like. Bake in a preheated oven at 200°C until golden brown, then serve.
