_____INGREDIENTS & NOTES_____

#1 Crispy / Sticky Tofu 0:35

200g (7oz) plain firm tofu
1 tbsp cornstarch/wheat flour
pinch of salt
optional: a few dashes of preferred spices (i.e. cumin, paprika, chili, pepper, garlic/onion powder…)
1 tbsp veg oil

for optional flavour boost:
1 tbsp soy sauce
1 splash white wine/rosé
1 tsp agave syrup

→ serves 1 (or 2 depending on how it’s served)

#1.5 Lemon Spinach Pasta 2:13

125g – 140g penne pasta (4,4 oz – 4.9oz)

2 shallots or 1 larger onion
1 tbsp olive oil
3-5 handfuls fresh spinach, roughly chopped
¼ – ⅓ cup pasta water (60ml – 80ml), more if needed
2-3 tbsp fresh lemon juice
1 tsp lemon zest
1 tbsp soy sauce
2 tbsp hummus
3-4 tbsp oat, soy cream (sub with oat milk or more water)
salt, pepper to taste

ALSO toppings of choice (sesame seeds, vegan cheese etc)

→ serves 1-2

#2 Tofu Butter “Chicken” 3:27

400g (14oz) plain firm tofu
2 tbsp cornstarch/flour
generous pinch of salt
1 drizzle olive oil
optional: a few dashes of preferred spices (i.e. cumin, paprika, chili, pepper, garlic/onion powder…)

for the sauce:
2 tbsp vegan butter
1 onion
2-3 cloves garlic
1-2 inch piece ginger (2,5cm – 5cm)
⅓ cup tomato paste (80ml)
1 tsp garam masala
½ tsp each: curry powder, ground coriander
1-2 dashes of cayenne pepper (or to taste)
salt, pepper to taste
1 can coconut milk (400ml/14oz)
2-3 tbsp fresh herbs, plus more for serving

serve with:
2-3 servings cooked rice
fresh chives, basil, cilantro, parsley…
fresh lime juice
sesame seeds

#3 Tofu Dessert (biscoff/caramel/cheesecake) 5:33
400g (14oz) silken tofu
180g (6.34oz) smooth biscoff spread (or ¾ cup)
1 tsp vanilla or a few drops vanilla aroma
dash of cinnamon
pinch of salt
3 tbsp thick soy yogurt, plain & unsweetened
3 tbsp powdered sugar

toppings: frozen berries?cookie crumbles?

→ serves 4

#4 Shredded Tofu Tacos

200g (7oz) plain firm tofu
1 tbsp cornstarch/wheat flour
generous pinch of salt
optional: a few dashes of preferred spices (i.e. cumin, paprika, chili, pepper, garlic/onion powder…)
1 tbsp veg oil

for optional flavour boost:
1 splash white wine/rosé
1 drizzle sriracha

serve with:
small toasted corn tortillas (3-5)
sandwich sauce*
pickled onions**
fresh herbs

*for the sauce combine:
1 ½ tbsp ketchup
1 ½ tbsp mustard
1 ½ tbsp vegan mayo

** for the pickled onions:

cut 1-2 medium red onions into rings
transfer to a heat proof jar, able to hold ~450ml (16oz)
add 80ml white wine vinegar (⅓ cup)
add 2 tbsp apple cider vinegar or distilled vinegar
add 1 tbsp agave syrup/sugar
add 125ml hot water (½ cup)

#5 Tofu Steaks

300g (10oz) plain firm tofu
2-3 cloves garlic
⅓ cup (80ml) vegetable broth
2 tbsp soy sauce
1 tbsp lemon or lime juice
1/2 tsp paprika poweder
¼ tsp each: cumin, onion powder

¼ cup (30g) cornstarch
1 tbsp veg oil to brush the tofu with

when cooking the sauce add:
1 tbsp agave syrup or sugar
½ tsp lemon zest
another tbsp of lemon juice
¼ – ⅓ cup more water to adjust consistency

serve with:
2 servings fries
a lil salad
the sandwich sauce from recipe #4 !

I think what I love most about your channel isn't the recipes (although I loved every single one I ever tried) but that you really thaught me how to cook and how to just mix together a few ingredients to have the nicest sauce/ topping/ combination. Cooking with this method is so much fun and makes what I eat so versatile without being super fancy or effortful. Just wanted to say THANK YOU for that♥♥♥!
    My favorite way to prepare tofu at the moment: crumble into small pieces, add paprika and soy sauce and fry it until crispy – makes a great "minced meat" for sauces or just to eat with some rice and korean cucumber salat!

  2. Anyone else ever feel like it would be the best to just hang out with Mina and cook? Or is it just me? 😅

    As much as I love tofu, I think chickpeas (or, really, any legume) are my favourite ingredient to cook with. Also soooo versatile. Just like tofu!

    I'm not a hat person either, but I like the idea of wearing things just cause they are fun, regardless of whether it's flattering or not. You look good though 😊

  4. I recently fried tofu with a bit of soy sauce, nutritional yeast, black pepper, seed mix, parsley, and onion and garlic powder. And I love it. It seems to work better when you break the tofu up by hand instead of with a knife. It's really simple, but I add it to almost all my rice and pasta now.
