Hello Folks!
Today I made a batch of these wonderful raisin scones….you could really use any dried fruit you like in these, but I think raisins work particularly well 🙂 Lovely with a good dollop of strawberry jam and cream 🙂 or simply with a scrape of butter. Enjoy!

What I used – 7cm cutter
500g (17.6 oz) Plain Flour
30g (3 heaped teaspoons) Baking powder
Pinch of Salt
80g (2.8 oz) White sugar
100g (3.5 oz) Frozen unsalted butter
2 Medium eggs + 1 egg yolk
200ml (7 oz) Buttermilk
150g (5.2 oz) Raisins

One tip I found useful was to invert the scones after you cut them out – makes them more straight and even

I make my own butter and use the butter milk in mine , nice proper strong Yorkshire tea. Yummy with lemon curd and clotted cream . 🐨💗

They look fantastic. I have never made scones with eggs before. It's more like a thick cake batter hey. I'm going to give them a go. Love scones.

With the high price of eggs in the a US I would eliminate the egg yolk wash. Some areas 11.00 a dozen. 😢

I fold the mix over to desired depth and then when thy bake they are almost cut in the middle if that makes sense.

These are very similar to my own favourite recipe.I am from Greenock,now living in Canada. 🇨🇦 Your accent is very south west coast of Scotland!
One tip I would add… with the raisins… I find it is best to soak them for up to ten minutes in hot water and pat them dry. This allows them to become more pliable and not draw moisture away from the dough. Helps with raisin oatmeal cookies as well. Love those tall scones! Thank you
