You just can't beat simple, wholesome food cooked with a bit of skill, and a lot of love. I'd eat that any day of the week as opposed to going to some fancy restaurant even if I got some snow down my collar, lol. Lived in Colorado a good chunk of my life, and hiking in the snow is a favorite activity of mine, with a flask of blackberry brandy to ward off the chill. Bless you both, awesome video Uncle Kent!

Dried chilis are flavor superweapons. The drying process concentrates all the goodness of the pepper into much less weight and volume, and in the process makes it much more durable so we can enjoy them year-round. I think I'm going to make this one for Superbowl Sunday to share with my friends. Although I will probably take the easy way out and cook it indoors this year 🙂

Very well done, partner. You have just cooked one of my absolute favorite meals on this earth. Chili Colorado, refried beans, rice and tortillas. Man, that is a meal made in heaven. Something that I can eat every day. My wife cheats when making this by using the crockpot with the canned sauce, but I'm smart and don't complain. Thank you for this video.

I loved the "wooden" spoon with the cast iron, I use stainless steel spatulas with cast iron!
Pork shoulder works as well.
A can of chipotles in adobo sauce is also really welcome in this kind of application.

I've cooked this many a time and your's looks spot on. That said, I aint never cooked it in the snow so hats to you and your camera gal. it looks great and you are right that this will warm a fella right up, especailly with those little chilles. They pack a punch. I like to serve it with some rice and tortillas. As an old friend Jack Godfrey (RIP) would say, "They're good for ya, good to ya, and make ya feel good too!" I edited this to say thank you for asking for prayer for the folfs over in California. They need help and the first thing that we need to do is go to the Lord in Prayer and ask for His healing and provision. Peace be upon all God's children. Amen.

Tip, take two of those chile's, roast them to a dark color before boiling them. Notice the taste change to a more Mexican flavor .
