Excellent recipes, Chef. If I may make a small suggestion regarding the cucumber salmon recipe, I would blot the excess water/moisture from the tops of the cucumber slices with a folded paper towel. This will allow the salmon mousse mixture to stick better. Happy New Year from one of your greatest fans. 🙂

I just tried to make this, what I learned I did wrong! For the mushrooms…. They should be at least 2” across, you can not use crumbled feta( must have something on it to not stick) and you have to use fresh breadcrumbs! I tried cheating with dried and it doesn’t work! Hope this helps someone else. Sorry Chef, I blew it…. Going to try again 🤪👍❤️
