so kewda water is basically is distilled from the pandanus flower, and this water just adds like the smell of the padanus cuz it's a really unique plant and has a very unique taste and smell. Kewda water can be used to add flavor to foods as well. all depends on the quantity.

Off to prepare a big lump of beef for our roast. We wanted rolled rib, but the butcher recommended a slightly different cut. More like ribeye, rolled with some extra suet. Apparently it avoids some of the connective tissue of rib of beef, and is more moist. Talk to your butchers!

I would say each state in India has different cuisine and each city has some specialities. So if you can say which state or city you are going, people can help you better.
31:36, Yeah though imperfect, level 2 was the only one who actually made a biriyani… Level 1 looked more like a rissoto and level 3 was basically a spicy porridge 🙂

My favourite indian dish is dosa, it's a Savory crispy pancake eaten as breakfast in south india
if you want authentic indian. it's in the indian households no in any hotel resturant. not even in 5star ones.
meat dishes you absolutely have to try: rogan josh, nihaari, haleem, kerala beef fry, pork momos from any north east indian source.
for biriyani, in many cultures, we put the dum (dough seal pot) on lowest heat possible without water on indirect heat and keep it for an hour or even more sometimes. this is done especially in lamb biriyani where we break big bones and add those too and it gives the time for the bone marrow to liquify and mix completely with rice.

i cannot imagine biryani with anything other than Basmati for the rice. Kewra water is pandan flower/leaf essence. It's got a strong scent and in my opinion smells kinda like rose water.
2:10:12 you should check gordon ramsey exploring north-east India cuisine. Its nothing like you have seen before or completely different from the general idea of indian cuisine which is mostly only representative of north india. North-East cuisine is a wonderful mix of south-east asia and south asia styles of cooking. Dont use any powdered spices or masalas like in other indian cooking and ingredients are very different, mostly non vegetarian food. Its titled gordon ramsey's the great escape (check the north-east india episodes)
