Eggnog cheesecake

Ingredients:
Crust:
500 mL (2 cups) graham cracker crumbs
30 mL (2 Tbsp) granulated sugar
125 ml (½ cup) butter, melted
Cake:
3 – 8 ounce packages cream cheese
250 mL (1 cup) granulated sugar
45 mL (3 Tbsp) all-purpose flour
175 mL (¾ cup) eggnog
2 eggs
30 mL (2 Tbsp) rum
2 m L (½ tsp) ground nutmeg

Method:
Preheat oven to 350°F (180°C).
Mix graham cracker crumbs, sugar, and butter; then press into the bottom and up the sides of a 9” spring form pan.
Bake 10-15 minutes until light golden, then cool to room temp.

Place eggnog, rum, eggs, flour, sugar, nutmeg, and cream cheese into your blender.

Turn machine on to High or liquify, and blend for 30 seconds or so – until smooth.

Pour mixture into pre-baked crust and bake 45-50 minutes, or until cake is barely firm to the touch.
Cool to room temp and remove ring.
Cover and refrigerate until completely chilled before serving.

  1. as far as i know the key is to put water on a tray and then put the cheesecake on top of it…seems like the moisture helps to get less cracks. I do not care about the cracks but i care about the flavor and texture…cracks can be hide with melted chocolate on the top or with whip cream…

  2. I haven't made a cheesecake in years, but may be tempted to make this one. It sounds delicious and I truly love cheese cake. As for cracks I wouldn't worry about them. But when I did make cheesecakes (it was back in the 60s and 70s) I recall the recipe I used (Betty Crocker Cookbook) said to let it cool in the oven for an hour after finished baking, which was to prevent cracking. It warned strongly not to open the oven door for an hour. I don't recall seeing cracking. I do recall one time tho that I forgot the one cup of sour cream that was to go in. No one could tell the difference.

  3. Sometimes they just crack, but I have great luck with cheesecakes that I throw together using a whisk. I add the eggs last and gently mix until I no longer see eggs. Beating eggs too much introduces a lot of air into the batter. Sounds and looks delicious. I’ve been looking for an eggnog cheesecake recipe. Thanks!

  4. Just hitting on your remarks early on about people being upset Julie takes pies with slices already out to work… They're just jealous. If I had a coworker who said "oh, my significant other does cooking videos on youtube" and was always bringing in delicious looking cakes, pies, pastries, ect, I would 100% go out of my way to be their best friend at work.

  5. One year I drank a bunch of eggnog. I was obsessed with it, and as you probably expect I got sick and 🤮. I tried it a few years ago with alcohol. I’m still not over that experience from my youth.
    When I’m around eggnog my brain says.
    “Don’t breathe this”
