Today, Molly shows us how to make her coziest rendition of short ribs: Hot Sauce Braised Short Ribs with Winter Squash from her newest book More is More. They are super aromatic with ginger, garlic, and cinnamon, and get tons of warmth from the hot sauce and soy sauce. While they do take an hour, they are the most low-lift short ribs ever, and they are welllll worth the wait. Not only do they taste amazing, but they are so tender and make for amazing leftovers. If you haven’t already made these, let this be your sign to do so.

INGREEEEEDZZZ:

Produce:
1 large or 2 medium red onions
1 (5-inch) piece of fresh ginger
1 garlic head
2 delicata or other winter squash (about 11⁄2 pounds)
1 bunch of collard greens

Protein:
4 1⁄2 pounds bone-in short ribs

Pantry:
3 cups apple cider vinegar
3⁄4 cup Frank’s RedHot cayenne pepper sauce
1⁄2 cup low-sodium soy sauce  1⁄2 cup packed brown sugar  Kosher salt
3 dried bay leaves
3 cinnamon sticks
Cooked white rice, for serving

  1. Pretty hard to get good short ribs these days. Beef is too expensive and it's an inefficient cut. Some high end butchers aren't even offering them anymore. It's one of the least cost efficient cuts there is. You could probably very easily replicate this recipe by cutting a 3-4 lb chuck roast into 2/3 large pieces instead!
