I used medium-sized aubergines, if you are going to use large aubergines, you can use them by dividing them. For frying the aubergines Let’s take half a tea glass of oil in a large pan and heat it. Then let’s dry the aubergines with a paper towel and throw them into the hot oil.
I don’t use too much oil as you can see Aubergine is like a sponge, the more oil we use, the more it will absorb. Let’s turn the aubergines as soon as we throw them into the pan so that the other sides are also greased.
Because if we do not turn it immediately, it will absorb the oil immediately and we will have difficulty in frying the other side. Let’s turn it immediately for good browning
Then, as you can see in the video, let’s make sure that they are nicely browned by turning them from time to time on all sides. As you can see, our aubergines fried very well in a little oil Sprinkle a little salt on it and set it aside
Let’s take 3-4 tablespoons of oil into a separate pan Chop 3-4 medium-sized onions into rings as you can see and add them on it. By adding a teaspoon of salt Roast over medium heat until lightly caramelised roasted onions Without removing the fat from the bottom of the pan
Put the onions on the aubergines On the oil remaining in the pan Cut 7-8 green peppers in half by cleaning the seeds. And let’s fry them in the pan Let’s fry over low heat until both sides are nicely browned, if you fry over low heat, it will not splash around
Since there is little oil in the pan anyway It won’t splash too much. And the fried peppers. Let’s take it on our vegetables Let’s chop 4-5 garlic cloves coarsely and throw them on it Again, chop 2 medium-sized tomatoes into rings and place them on the remaining oil in the pan.
Let’s fry lightly by turning on both sides Put the fried tomatoes on a plate Add 2 medium-sized tomatoes peeled and chopped into small cubes on the remaining oil in the pan Add 1 teaspoon of tomato paste and roast
I wanted to use it in tomato paste because the colour of my tomatoes was a little light for me, but if you are going to use red summer tomatoes you can also do without tomato paste One and a half cups of water
Add 1 teaspoon of salt and half a teaspoon of black pepper Let it cook over low heat for a few minutes by stirring well After cooking for 3-4 minutes, spread it evenly over our meal. Let’s place the fried tomatoes on it and put our meal on the stove
After it starts to boil, let it cook on low heat for 25-30 minutes. our dish has been cooking for about 20 minutes I wanted to sprinkle some chopped parsley on top You may not use it if you do not like it Close the lid of the pan again
Let’s continue cooking for another 10 minutes I cooked my dish on low heat for half an hour in total. Sounds like a little too much water to me. I want to open the lid and boil over high heat for a few minutes and let the water drain a little
You can adjust the amount of heat as you wish, if you want watery or more waterless. You can drain the water like me Let’s remove our dish from the stove and let it rest for about 15-20 minutes. And then let’s put it on a serving plate
