For the marination process, I use about 1 kilogram of red meat. I will be using meat. Do not beat the meat you are going to use. Because the beaten meat will release the water inside, it will have a hard consistency. Now I take a large debtor to marinate the meat. Make sure to marinate the meat in a wide shallow bowl so that the sauce can get all over it. For this, a glass of milk, if you do not have milk, yoghurt water on hand. It is also possible. I poured the yoghurt water into my baking tray, then I add a tea glass of olive oil into it . Now I add a teaspoon of black pepper to my marinade. If you have it, you can also use black peppercorns. You can add it as much as a tablespoon. Now add a tablespoon of grape vinegar into it. The reason why I add grape vinegar is to soften the meat with the acids it contains. Let’s crush two cloves of garlic well and add them to our marinade. Then I grated a medium-sized onion and I will only add the juice of this onion. I will definitely not use the pulp in it. Put it in a strainer and press it with a spoon. I just add its juice into my marinating sauce. In the marinating sauce, be sure to add acidic ingredients such as lemon juice, vinegar, onion juice or tomato juice, so that your meat will soften more easily. Now , I added a teaspoon of chili peppers and mixed all these ingredients well. By the way, I should mention this. I definitely do not add salt to the marinade sauce. Salt hardens the meat, and thyme also gives bitterness during the waiting period. I will add these at the last cooking stage. Now, after mixing the marinade sauce well , I will arrange my meats one by one in my baking pan, as I said, I will definitely have a wide Borcam like this or another. Marinate it in a container so that the marinade sauce penetrates and smears all the meat well. By the way, I should also point out that a rested meat will always be soft and it does not even require marination. Why is the marination process done? We do the marination process to soften the meat and add flavor. Generally, people who love meat He prefers to eat his meat by cooking it with salt and black pepper or other spices in order to enjoy the taste of the meat without any marination, but it is necessary to do the marinating process in order to soften the hard meats. Now I turned all the meat front and back, coated it in sauce, and then covered it with stretch film and put it in the refrigerator. I will remove it and keep it in the refrigerator for at least 2-3 hours. I kept the marinated meat in the refrigerator for about 3 hours. At the end of the 3 hours, I will put it on the counter and turn it upside down again and let it come to the ambient temperature. After it reaches the ambient temperature, cook your meat. Today, I cook my meat in a cast iron pan, using a large stove. I took your eye, I turned on my Fire Stove and after it got very hot, I placed my meat in my pan. It is very important that the meat comes to ambient temperature during the cooking process. Also, it is also important that the grill or pan you will cook it on is hot. I placed my meat in the pan that I heated well. I continue to cook the meats by pouring a little over them. The taste of the meats cooked in a cast iron pan is even more delicious. Those who only use pans know that when you grill in a cast iron pan, it means that your kitchen will be smoke-filled. After the juices of the meats came out, I continued the cooking process by turning them upside down like this. Today, I cooked my meats in a pan. But if you wish, you can also cook the meat in a pressure cooker with marinade sauce and cook it in a stew consistency like this. I kept the meat I placed in the first pan aside and then placed the remaining ones in the middle and continued cooking my meat. After my meat was cooked well, at the last stage, I salted the meat. As I said, let’s not add salt to the marinade sauce because you can add salt to your meat. I can harden it, I turn it over again, then I turn the bottom to the top, then I sprinkle salt on the top part again. At the last stage, I give it a little butter bath by drizzling thyme on it and putting small pieces of butter on it, and I make the meat ready to serve.
