I add about a teaspoon of lemon juice to the baking soda. I mix all these ingredients well . I used sunflower oil for this pastry . If you’re using olive oil, half a cup will suffice. Of course, if you’re using half a cup of olive oil, the amount of flour will vary slightly. Now, I add the flour, baking powder, and salt. I’ll use 4.5 cups of flour in total, but I’m adding 4 cups of flour first. I set aside half a cup. I’ll use it as needed. I also add a packet of baking powder and 1 teaspoon of salt . You need to pay attention to this consistency. After kneading the dough, I’ll immediately prepare the balls. I’ll take pieces of the dough slightly larger than a walnut and divide them into 20 equal pieces. Then, we’ll prepare the balls and shape them immediately. After rolling the dough in the palm of my hand, let’s stretch it out a little and add cheese, making sure it’s in the center . I used cheddar cheese because we’ll be eating it for breakfast. You can use different cheeses if you’d like. If you’re making this for breakfast, kashar cheese pairs beautifully with this poğaça, but let’s say you’re letting it sit. You can also use different types of cheese. I also freeze this poğaça after making it. I take it out of the freezer and let it thaw slightly before baking it in the oven. Reheating it in the oven for a bit makes it as fresh as if it were fresh. You can make the same and freeze it . I placed the cheese inside all the poğaças . Now, let’s coat the bottom (the folded part) and the edges of the poğaça with egg white. Then, sprinkle with toasted sesame seeds and arrange them on a baking sheet lined with parchment paper. This makes it look truly beautiful. I prepare all the poğaças in the same way and arrange them on the sheet. After brushing them with egg yolk and slashing them with a knife. Because the cheese is inside , I make slashes on both sides of the poğaça to prevent it from bursting and cracking, so it opens like a flower. It creates a beautiful look. This will also help prevent the cheese from spreading. By the way, right after kneading the dough, before shaping the pastries, I turn on my oven. I preheated my oven to 190 degrees Celsius (350 degrees Fahrenheit) without fan. After preparing and shaping the pastries, I bake them in a preheated oven at 190 degrees Celsius (350 degrees Fahrenheit) for about 30-35 minutes. Baking times may vary depending on your oven.
