Ultimate Keto Fathead Dough Recipe
1 1/2 cups shredded low-moisture mozzarella cheese
2 oz cream cheese
1 large egg, beaten
3/4 cup whey protein isolate
1 T Fat Free Greek yogurt
1 t psyllium husk powder
1/4 t beef gelatin powder
1 t baking powder
1/8 t baking soda
1 t Italian Seasoning (pizza dough) OR 1/4 cup Powdered Confectioner’s Sweetener (sweet applications)
1/4 t salt
In a microwave-safe bowl, combine the shredded mozzarella and cream cheese.
Microwave on high for 30 seconds, stir, and microwave for an additional 2 rounds of 30 seconds each until fully melted. Stir until the mixture is smooth and gooey.
In a separate yellow bowl, whisk together the whey protein isolate, psyllium husk powder, gelatin powder, baking powder, baking soda, Italian seasoning (if using), and salt.
Add the beaten egg and Greek yogurt to the melted cheese mixture. Stir quickly to combine before the cheese cools down.
Add the dry ingredient mixture to the cheese mixture. Mix thoroughly using a wooden spoon, spatula, or your hands. If the dough is difficult to combine, warm it slightly in the microwave for 10–15 seconds to make it more workable.
Knead the dough gently until it is smooth and elastic. If the dough feels sticky, dust it lightly with whey protein isolate but avoid adding too much.
Preheat your oven to 375 F.
Roll out the dough between two sheets of parchment paper to your desired thickness, depending on the application.
For pizza crust or flat applications, bake for 7 minutes, then flip and bake for an additional 2-3 minutes until golden and firm, or less if you don’t want it as crispy. Up the temp to 400, top the pizza and bake for 8-10 minutes until done.

Hi! I do not have a microwave. Can the cheeses be heated on the stovetop and still come out the same?
This is similar ti my fat head dough but I add in pork panko and "a lot" of yeast for flavor. I like a good yeasty pizza! Looks good victor!

Looks interesting. I’ll try it. I add a little yeast to mine, and I let it set in a warm area for a while before I bake it. It enhances the flavor and surprisingly, you get a little rise out of it.
I always use the stand mixer with the paddle attachment for my fathead dough. Real easy!

Have you made cinnamon rolls from this new dough.? It sèems that there is so much cheese that you wouldn't get s soft, light slightly chewy roll. I'd like to see you make monkey bread or cinnamon rolks from thys. Also what about french fries! Cut up in strips and deep fried in tallow or maybe avocado oil. Or fried cheese. Take string cheese wrapped in a thin layer of this dough and either baked, air fried or deep fried. Maybe the dough could be made more liquid and dip the string cheese then refrigerate to solidify a bit then fry them or freeze them and fry them from frozen. Or par bake for a couple of minutes, then wrap the cheese in that still soft dough then let it cool or freeze then fry them. Just a few thoughts… Curious in AJ…😮

Low moisture, yes. Part skim, HELL NO! They make low moisture and full fat. Much healthier.

Way too much work for pizza dough, and too many ingredients. I take a pound of ground chicken or turkey, add some Italian seasoning and maybe a bit of ground chili or cayenne. Roll between two pieces of parchment into two pieces. Bake in oven.
