Welcome to Gülsüm’s Palace. Today, I’m sharing a recipe for chicken with vegetables and a wonderful raisin pilaf. And I’ll get right to the recipe. I used the drumstick part of a chicken leg. This is my second time making this recipe. The previous time, everyone couldn’t get enough of it. So, I wanted to make it again and share it with you. I poured 5 tablespoons of oil into a pan and turned the stove on high. After the oil had reduced completely, I added the chicken and browned it on one side first. I flipped the chicken, as you can see. The stove must be on high as well. If the chocolate is heated, the chicken won’t brown properly, and the juices will get wet. I also finely chopped an onion. I also want to mention this immediately. After the chicken was browned, I reduced the heat to medium. I added the thinly sliced onions to the chicken. I sautéed for a couple of minutes on medium heat. [Music] I cut the carrots, which I’d previously peeled and washed, lengthwise, as you can see. After adding the carrots, I sautéed for another minute or two. Since the carrots had already browned, it was helpful to sauté a handful of water first. I also cut two red peppers into long strips. After adding the peppers, I sautéed the peppers and the remaining tops for about 10 seconds. [Music] You can also use a tablespoon of tomato paste, or a pricey red pepper paste . After adding them, I sautéed them with the tomato paste for about a minute. I also cut a zucchini, which I had previously washed, lengthwise in the same way. I added the sliced zucchini to the pan. I also washed a white zucchini in the same way and cut it lengthwise. After adding the white zucchini to the pan, I used a bowl of sweetened yogurt. If you’re using dry yogurt, you need to cook it beforehand. Add it after it’s cooked. I added the spices, red pepper flakes, black pepper, and black pepper to taste, then added about 1 liter of water. You can adjust the amount of water to your liking. I added a teaspoon of salt. You can adjust the spices and salt to your liking . The stove is still on medium heat. We definitely don’t reduce the heat yet. After the water boils, we cover it and reduce the heat to low and cook until the vegetables are cooked. While the food is cooking, we prepare the pilaf. I added one cup of grapes to 4 tablespoons of oil. You can roast the grapes over medium heat, stirring constantly, as you can see. As you can see, the grapes will swell as they roast. We’ll roast the grapes until they are completely swollen. [Music] You need to stir the grapes gently to prevent them from burning. They have all swollen. It has reached the consistency I wanted. I added the rice to two cups of rice that I’ve already washed. I stirred constantly, as you can see. To ensure the rice is grainy, drain the water completely after washing the rice. Also, while cooking, sauté for two minutes, then add salt. After adding the salt, sauté the rice for another two minutes, stirring constantly. If you want to make grainy pilaf, you need to sauté the rice very well . I added water to the pot. The amount of water varies depending on the type of rice. You can adjust the amount of water according to your specific rice. I covered the pot. Once the water started to boil, I lowered the heat and cooked it on low heat until the rice absorbed the water and was cooked through. As you can see, our rice is in pieces. By the way, our dish is cooked. I don’t overcook the vegetables. Because vegetables with a little skin are healthier and more delicious. And I’m serving right away. I also added some pomegranate seeds to the dish. Since the broth is so delicious, you can pour some of the broth over it before serving. This dish turned out delicious. I highly recommend you try it.
